Love chicken and need some new ideas on how to cook it besides just fried and baked with a little lemon and garlic...

Baked Parmesan Chicken
roll boneless skinless breasts in mayonaise
then cover them with a mixture of seasoned bread crumbs and parmesan cheese
cover the bottom of a baking dish with frozen chopped brocolli
lay the coated chicken on top of the brocolli
Bake in a 350 degree oven til chicken is done (I usually use the breast tender strips-they cook faster) about 30-40 minutes
Serve with your favorite rice(white, brown, pilaf, etc)
Delicious

I like a variety of ways, but here's one way that is different, delicious, and easy.

put a bulb of garlic inside a whole chicken, cover the outside of the chicken with cinnamon. also put some cinnamon inside.

Bake upside down at 350 degrees for 18-20 min. per pound. Baste occasionally.

Delicious!!

oh...make sure you cut off the ends of the garlic bulb first, so they are exposed.

Try coating the chicken in seasoned bread crumbs with parmesean cheese, fry in oil till barely done. Add a slice of mozzarella, Bake for about 10 minutes at 350 degrees until melted and serve with spaghetti and tomato sauce..

Take a whole chicken cut up..spread it in an oven pan.

*Add a large sliced onion and fresh sliced garlic
*Add a package of sliced mushrooms
*Cut in quarters about 3 lrg potatoes
*Add a bunch of green leaves of Cilantro
*douse in half a bottle of hot sauce
*Garlic salt/parsley and plenty of pepper and add (on the end) a coffee cup full of water
*cover with tin foil
*make seperately, a large pot of white jasmine rice/cover

Place in oven at 475' degrees for an hour..and 15 minutes.

The smell alone will drive your neighbors (they will come a runnin)

*******CHICKEN DORITO SURPRISE
1 bag Doritos
1 (16 oz.) Cheddar cheese, grated
4-5 boneless chicken breasts, cooked
1 can cream of chicken soup
1 can diced Rotel tomatoes
Combine in food processor: Cream of chicken soup, Rotel, 2/3 cup grated cheese and chicken. Line cake pan with layer of Doritos, then spread mixture on top of Doritos. Layer with Doritos again and top with cheese.
Cover and bake for 30 minutes at 350 degrees. Then uncover and bake for 10 minutes more. Serve with guacamole and sour cream.

******Ranch Chicken Breasts Recipes

1/2 cup ranch salad dressing
1 tablespoon flour
4 boneless skinless chicken breast halves
1/4 cup shredded sharp cheddar cheese
1/4 cup grated parmesan cheese


Combine dressing with flour in a shallow bowl. Coat each chicken breast with dressing mixture. Place on ungreased baking pan. Combine Cheddar and Parmesan cheeses; sprinkle on chicken. Bake at 375°F. for 25 minutes or until chicken is no longer pink in center and juices run clear.

Chicken Kiev or any varation of it....pound boneless skinless chicken breasts until thin....put either hard butter in the middle or swiss cheese and ham...pretty much anything you want. Roll it up and secure it with toothpicks and then roll them in flour, dip them in eggs (scrambled up with a fork) and then seasoned bread crumbs...fry them in oil until browed, then bake at 350 for about 45 minutes. You can pour any kind of gravy on them afterwards or have them without gravy.
