I don't want to add water. It will make it too loose.

Or should I just start over??

Add a touch of sugar. Sugar helps to neutralize the ´heat´.
You can also increase your chili ingredients...add more beans, etc...

I would add some beans, drained of course......like canned cannalini beans (white kidney beans) or a can of stewed tomatoes (again, drained)........If you have some ground beef, you might want to fry that down and add it to the chili.....(don't season the beef at all, of course) You could also "drown" out some of the spiciness by adding a lot of toppings, onions, cheddar cheese, sour cream.......gee, now I'm Jonesing for some hot, steamy chili........Hope this helps!!! You could add more water and let it boil down. Try a bit of sugar and see if it helps. You could also begin again and use a bit of what you have, and save the rest for future use. Raw potatoes are generally used to absorb too much salt in chili.

You can add uncooked potatoes (that will cook in the chili) to absorb some of the heat. Or, keep it spicy and when you serve your chili, top it off with sour cream.

I usually add a little brown sugar, or if I've served it already just add some sour cream, it tastes really good w/ it and cut's the heat since it's dairy.

My deviled eggs have cider vinegar, grey poupon mustard, mayo, sugar, salt, worchestershire sauce and topped off with a sprinkle of paprika. Guacamole has 4-5 avacados, cubed 1/4 finely chopped green onions 2 cloves garlic, crushed or a tblspoon garlic powder (more or less to taste) 1/4 c fresh or canned chili peppers, finely chopped or 2 + (I use 6-8) crushed dried red peppers(I use Thai peppers) seeds removed and finely chopped, reconstituted in 1/4 c hot water Couple teaspoons of lime juice 1/4-1/2 C pineapple juice OR a peeled and cubed mango). Or both. Mix all together, don't mash avocados completely. Let sit for an hour to let flavors meld together. Sometimes I add black or red beans and some chili powder to it. Sometimes I put tomatoes in it and cilantro, but then I have more of a salsa. Been known to add curry for a little different flavor. I have a spicy bean dip made by a friend that I am stirring into the current batch. Yummy! Serve w/ blue corn chips Eating it right now, made myself hungry!

Add cheese.

Or cut up some raw potatoes, and let them soak in the chilli for awhile, then fish them out. They may help absorb some of the burn.
