It was almost like a ball of noodles on the plate. And it was really hard to mix in the other ingredients with the noodles (chicken and veggies).
What could I do next time to keep them from being so sticky and clumpy?

when cooking pasta of any kind you must have enough water, 1 gallon per pound of pasta. and you must keep stiring it as it cooks. in the case of rice noodles bring the water to a boil, put in the noodles, cover and remove from the heat. let sit 15 minutes and drain. don't ever run cold water over the pasta, it washes away the outer most layer of starch. put them in a bowl and toss with your sauce or a dressing. the pasta will absorb the flavor as it sits.

With any noodles:

Boil in plenty of water (don't cook it dry like cooking rice)
Drain
Rinse with cold water (stops continued cooking which sticks them together)
Add some kind of oil or fat to stop them sticking - for rice noodles use a tiny amount of sesame oil.

Over cooked them>keep tasting them till there soft not gummy add some butter> olive veg oil> your choice after drained> Don't wait or they stick together Add extras>with sauce>Cover with Parmesan cheese>

You may have overcooked them a bit, but usually to prevent that from happening, i mix in some olive oil with my pasta and give it a stir after straining, before adding the other stuff

i think your supposed to mix in water.
