Chicken and green bean casserole:
1 lb. chicken
1 to 2 cans cream of mushroom soup
1 to 2 cans green beans
1/2 box Ritz crackers
Salt and pepper
Take 2 cans of canned chicken OR about a pound of cooked and cubed (I'd rather it be shredded) chicken breast. Place than in the bottom of a casserole dish.
Add 1-2 cans of green beans, and 1-2 cans of cream of mushroom (I say 1-2 on these because some people like their casseroles more creamy... and you may want more or less grean beans).
Stir all this, plus salt and pepper, around in the casserole dish.
Take 2 rolls (1/2 a box) of Ritz crackers and put them in a big zip-lock baggie. Take a rolling pin (or something else heavy and round) and crush the crackers.
Melt 1/2 stick or more of butter (I like more, but I'm a butter freak) and then pour into the zip-lock baggie full of crackers. Shake the bag until the crackers are evenly coated w/ butter.
Cook at 375 degrees for about 45 minutes (until the top is crunchy and golden brown).

Go out and buy a couple of those Lipton Rice packets (Rice-A-Roni works, as does any kind of flavored noodles) put that with your chicken in a pan or microwave safe bowl with the packets (2 usually work good) with the prescibed amount of water from the packet (sometimes I go about 1/2 a cup light on the water if the chicken is frozen because it will make its own liquid) and by the time your rice/noodle mixture firms up, the chicken will be done.

Quick and easy,
This is a Homemade Shake-And-Bake.
For two people probably 4 pieces of chicken, I use thighs cause I like them the best.
Preheat oven to 375 degrees.
In a plastic bag mix:
1/2 cup flour
1 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon dried thyme
1/4 teaspoon pepper
Put 1/2 cup of milk in a bowl.
Grease, or spray with Pam, a baking sheet.
Dip chicken in the milk, shake off excess, and add to bag. Shake to coat evenly and put on baking sheet.
Bake 40 minutes, until chicken is tender and the coating is crisp.

Salt and pepper chicken pieces. Crush crackers into crumbs.
Then put chicken in crumbs and coat. Place all the pieces treated this way into a greased baking pan, 13"X9". Melt a sick of real butter and drizzle over chicken. Place in 350 degree oven approx. 1 hour or until golden brown. ( If you don't have crackers you can use bread crumbs or crushed potato chips. Forget the salt if using chips.

Chicken Casserole
4 chicken breasts
2 cans cream of chicken soup
2 packets of butter crackers (ritz)
stick of butter
Boil the chicken for about 2 hrs and let cool so it can be shredded. Combine the cream of chicken soup just as the can says with milk and mix with the shredded chicken, pour into a 13X9 pan. Top with crumbled ritz crackers and then slice the butter and drop it at various places on the top. Bake at 350 just until the butter melts. I usually serve this with mashed potatoes, green beans, and rolls. A big hit with my kids!!

Chicken Schnitzel
Ingredients:
Chicken breasts, eggs, flour, bread crumbs (optional), any kind of oil (or butter if oil not available)
STEP 1: Cut chicken breasts in half if thick. Pound with meat tenderizer to even thickness.
STEP 2: Pick option 1 or 2:
Option 1:
Beat several eggs with fork (e.g. 1-2 eggs for two chicken breats). Spread flour and bread crumbs in separate plates (approx. 1/2 cup of each for 2 chicken breasts). Dip each chicken piece first in flour, coating well, then eggs, then bread crumbs.
Option 2:
Omit bread crumbs. Dip first in eggs, then in flour.
STEP 3: Heat oil in frying pan on medium heat (enough to cover bottom comfortably). When heated, place chicken pieces in oil and fry until crisp and golden, turning occasionally.
Serve with any vegetable/salad. Mashed potatoes and a green salad is what I do. Yummy.

Lemon Chicken Stir-Fry:
1-lemon
1-Lime
2-boneless, skinless chicken breasts
2-cups instant white rice
1-bag frozen california blend vegetables or 1-bag frozen brocoli/cauliflower blend
lemon-pepper seasoning
Boil Chicken in 3 quarts water with juice from lemon. Simmer on medium heat for one hour or until meat inside is white not pink. Take Chicken out of broth and cool. Use chicken broth to cook rice....2 cups broth needed for 2 cups rice. Follow instructions on box. In 4 Tbls of water simmer frozen vegetables until almost done. After you cool chicken cut into 1-inch cubes. In large fry pan or wok put 2 Tbls canola oil. Add chicken cubes, vegetables, juice from lime and 2 Tbls lemon pepper seasoning. Cover and cook on medium low heat for 15 minutes stirring constantly. Place rice on plate and put stir fry ontop. Easy to fix and tastes great!!

FRIED CHICKEN (LIKE KFC)
2 eggs, beaten
1 1/2 cups milk
1 cup flour
3/4 cup fine bread crumbs
1 tsp. Knorr chicken bouillon
1/2 tsp. salt
1/2 tsp. garlic powder (not salt)
1/4 tsp. onion powder (not salt)
1/2 tsp. paprika
1/3 tsp. Bell Seasoning
1 tbsp. freshly chopped parsley
2 large cloves garlic, minced
1/2 tsp. soy sauce
2 tsp. black pepper
1 tbsp. Wondra flour
1/2 tsp. Monosodium Glutamate (optional)
additional flour for separate pre-coating
5-6 cups Crisco cooking oil
1 frying chicken, cut in pieces
Safety Warning: A special pressure fryer is the only type of pressure cooker that you can fry in safely. Read your manufacturer's instructions before frying in a pressure cooker. If you don't have your instruction manual, then prepare this chicken in a deep fryer instead.
Pour the oil into the pressure fryer or deep pan suitable for frying, and then heat over medium heat to about 360 degrees.
In a small bowl beat the egg, milk, and soy sauce, then stir in 1/2 tsp. Knorr chicken bouillon (save the other 1/2). Put the garlic cloves through a garlic press and add into the egg mixture. Add half of the parsley and 1 tbsp. Wondra flour. Stir well.
In a separate bowl, combine the 1 cup flour and the bread crumbs, and the remaining ingredients. Mix well with a fork.
Put about 1/2 cup additional flour in a separate small bowl. Use this to dip each chicken piece, prior to dipping in the milk and seasonings.
Roll each piece of chicken around until well covered, first in plain flour, then in milk mixture, then in flour/bread crumbs mixture.
Gently lower the chicken pieces into the hot oil and allow to become a golden color (add the bigger pieces first).
Pressure Fryer:
If you are using a pressure fryer, place the lid on and lock it when the chicken is a very light golden color, usually about 3 minutes. Begin timing when the lid is locked and the gauge indicates a pressure of 5-6 pounds. Bring temperature up immediately and watch carefully (don't walk away!).
Remove from heat after about 7 minutes and reduce pressure following manufacturer's directions. Remove the chicken pieces and place on layers of paper towels. Return the pan to the stove and bring temperature back up and continue until all chicken pieces are fried. If your chicken was too brown, cook the next batch for a minute or so less, and vice versa if your chicken wasn't browned enough. Do not overload the cooker with too many pieces, as it brings the temperature down too quickly and will cause the pieces to absorb more of the cooking oil than it otherwise would.
Regular Deep Frying:
Fry the chicken at 360-375 degrees, placing the larger pieces in when the temperature is slightly lower (temperature will drop when pieces are added). Put the smaller pieces in when the temperature is higher, and they will be cooked more quickly. Remove when chicken is golden brown and drain on paper towels.
TIP: To flavor the oil in this method, you can thickly slice a few large onions and add to the oil before the chicken - skim these out when they are browned, before adding the chicken. It will add an additional layer of flavor to the oil!
