Some people say you scoop the flour right from the bag and even it out, when others say it's better to scoop up the flour, press it in the cup then repeat the step until the cup is crammed with flour. Which way do you find works better?

The best way to measure flour for baking is by weight. But since most people don't have scales in their kitchens we use measuring cups. Don't cram the flour into the measuring cup. Scoop up the flour and let it fall a few inches into the measuring cup so that you are aerating the flour. Then use a knife to level off the amount in the cup. If you don't aerate (fluff up) the flour before measuring then you will actually use more flour than the recipe calls for and your baked goods will be dry and heavy.

Don't cram the flour into the cup. This will give you too much flour for the recipe. The flour should be lightly placed in the cup (I use a spoon). This is why many recipies used to require sifting before measuring.

You do not pack flour. You do pack brown sugar and things like that, though. You just use a dry measuring cup, scoop it up, level it off with a the back of a knife and there you have it.

Pour the flour into the measuring cup, level it off, and be done with it. Forget scooping, and cramming.

If you are following instructions from a label or source. You need to follow the instructions closely. Do not cram the flour in to the measuring cup. Just fill it up and use something to level it off.

If you are measuring a cupful of flour, you should (traditionally) scoop it from the bag into a cup without pressing it.

I know you don't press it into the cup. My method is to scoop the flour, then level with a knife. The "correct" way is to sift the flour into the measuring cup, then level with a knife. I don't know anybody who actually sifts flour any more, though.

The cramming method is used for peanut butter, Crisco, and brown sugar - never flour.

NEVER press flour; you will get too much. Scoop it lightly in the measuring cup and use a flat edge (a butter knife or similar) to level it off.

DO NOT CRAM THE CUP! Just scoop it, and use a butter knife to scrape the extra off. Otherwise your recipe will fail.

i just get the measuring cup, fill it with flour and even out the top with the flat side of a knife
