Visit the Bishop Museum if you're on Oahu
Pack something to eat and take a ride around the island.
Stop and eat at one the many lunch wagons. The plates usually have large portions, and it's safe.
Go to Waimea Valley and take a walk to the falls, I think it's still free (ha ha ha)
Then you can stop at Haleiwa town for some more grinds, shopping and cocktails before heading out to Mokuleia to watch the sunset!
Pali Look-out, gives a beautiful view of the Windward side.
Punchbowl Cemetery....it's beautiful and has a look-out where you can see all of Honolulu.
Walk around the Aloha Tower and stop in for lunch/dinner or cocktails at the restaurants. It's right on the harbor.
Up to Diamond Head ...
Woops, this is becoming a novel huh! Well, you get the picture.
Enjoy your honeymoon. Travel safe and be cautious, no matter where you travel to.

Sure, there are lots of things to do in Hawaii that don't involve beach. The idea already suggested of going to the Big Island is a good one, as there are few swimmable beaches there.
But if you think that there is ANY chance that you will end up with any resentments about being in Hawaii & not being able to enjoy the beaches (As much as you are OK with your guy's attitude, isn't there any possiblity that you might react that way? Just consider it.) then don't go to Hawaii. It would be a shame for your honeymoon to be spoiled by any emotional undercurrents.

We really like The Big Island (it's called Hawaii, but all the locals call it The Big Island). There's a LOT to do that isn't about the beach. We like going up to the volcano (great little places to stay at Volcano Village -- nice B&Bs) and hiking around in the rain forest. On the north side of the island it's ranch land and lots to see -- on our last trip we took a really fun ATV tour down to an historic beach. The tour guides are all 5th and 6th generation Hawaiians, and taught us a lot.
I recommend the book, "Big Island Revealed" because it has lots of great ideas, and their restaurant reviews and recommendations have been right-on for us. (We're a couple, young 55 and 45.) It's possible to spend the whole trip in jeans and lightweight shirts...

Hawaii is most definitely NOT all about the beaches. Depending on what island you're going to, there's a ton of stuff you can do together from sunset dinner cruises and helicopter tours to hiking and kayaking. If at all possible, I hope you're at least able to wear a pair of surf shorts (they have longer ones that go down to just above your knee for women) and maybe a tank top. That way you'll be well covered, but still able to enjoy some of the water activities like kayaking and a tubing-tour, where you ride down a river in a giant inner tube.

Depending on what Island or Islands you go to there are plenty of thing to do besides going to the beach.
On Oahu - Pearl Harbor, Punch Bowl area, a drive around the Island to the North Shore. They have plenty of handouts that will give you ideas of thing to do.
On Maui - Haleakala National park, great place for a helicopter ride (take the tour of both ends of the Island) and if you go in the winter the waterfalls are spectacular.
But it's a great place to just walk the beach too.

My wife and I have been going to Maui every winter for over 20 years, and we don't even own bathing suits. We just are not interested in swimming or sunbathing or laying on the beach. So we have found plenty of other things to do.
Drive around and hike around and look at the beautiful scenery. Go on some boat rides, bike rides, helicopter rides, ATV rides, horseback rides. Sit on the lanai (balcony overlooking the ocean) at your hotel or condo to read and relax and gaze at the ocean (and watch whales in the winter). Eat at great restaurants.

kaua'i is beautiful, and lana'i is pretty much the honeymoon island, but if you want to stay on oahu, stay at the kahal hotel, it's near enough to waikiki so you can go out and do the tourist thing, but far enough away so that you're not right in the middle of the city. but if you really want to get away from "city life", rent a beach house on the north shore.

There are so many things to do in Hawaii other than getting in a bathing suit. The view alone are breath-taking.

It depends what island you are going to. You can take a nice romantic dinner cruise. Go see a luau-traditional Hawaiian feast. You can take a submarine ride w/Atlantis Adventures to see the fish. Helicopter ride to see beautiful waterfalls. See rainforest. Lots of things.
