I have tried everything - lowering the temperature of the oven, different pans, but my cakes always are hard around the edge. Any help?

sounds like something to do with your oven. have you tried pre-heating @ a lower temp then gradually increasing after you put the cake pans in?

might be too much shortening / flour if you are greasing pan with ? it absorbds into the cake edges ? i have gone to using non stick bakeware and use butter flavored crisco spray. it works great for cakes. there is also a vegetable oil and spray flour combined in a can. i think it is called bakers secret. these spray products work great.

Sounds like you may be over baking your cake. You should check your oven temperature.
Although, I love crispy edges on cake, pizza, cookies. Its my favorite part.

It sounds like you are over mixing and for sure over baking.Don't grease or spray the sides of the cake pan.Only the bottom.Hope this helps.
