No a Truck driver never uses his jake brake on snow or ice, If he/she does the rear drive tires have a chance of braking loose thus causing the truck to skid, Also the driver does not try using the trailer brakes as well, they will lock up easy and causing the trailer to jack-knife.

As with a car, the driver steers in direction of skid, also depends on if the trailer is in a skid as well, if trailer is coming around to left, and you steer left, guarenteed to jack-knife so if trailer is skidding, the driver uses caution, experience, and knowlegde to try to avoid an accident much less a skid or jack-knife
