Most people are selfish.

Most Christian, Catholic, Muslim, Buddhist, (and every other religion) followers make some money and have a very good life at the expense of others.

This lady gave up every good thing, and went into the worst part of the world, to help the least "helpable" people.

If she's not a saint, then there aren't any.

As far as I know the Catholic church has not declared her sainthood. They have discussed it, they need some testimony about any miracles she might have performed. They are considering some guy who had gall stones. After Mother Teresa prayed for him he he got better. Not much of a miracle in my medical opinion.

She devoted her life to serving the sick & poorest of the poor.
As to giving last rites, lay people who are designated as Eucharistic Ministers are able to administer last rites. Since Mother Theresa's whole ministry was administering to the sick and dying, she was no doubt authorized.

She was no saint. The story about her, was that she 'stole' children and then sold them - the money she collected - she sent to the Vatican.
There was news about this - but this did not get into wide circulation - hence she appeared like a saint to those who didn't know what she really did...
Maybe this explains why the Vatican looks favourably upon her..

Does it really need to be explained?

She lived the word of God, put it into action. Lived her life according to Christ's teachings in the Gospels. She acted as the love and hands of God in the world (thereby sanctifying it). Her life in Christ is worthy of emulation. These are the reasons why we are sure she is in heaven.

All who are in heaven are saints, all on earth are called to be saints. She is just on the road to being officially recognized as one who we are sure is in heaven (that is all that being recognized a Saint means).

EDIT: Although I have many issues with Mother Teresa's conservative stance within the Church, to denigrate her work as corrusion below has done is apalling. And the fact that she had such a conservative stance proves him wrong, NUNS CANNOT ADMINISTER LAST RITES, and a conservative would never stand for one attempting to, ONLY A PRIEST CAN ADMINISTER LAST RITES it is a Sacrament. Also the fact that hundreds of Hindus attempted to break down the church door just to see her body and that she is the most revered figure in ALL of India next to Ghandi proves him wrong again.

No, a bitter, cruel, domineering woman who loved the fact that people were poor and sick. She showed no respect for the beliefs of others, often having her nuns perform last rites over protesting Hindus.

Miracles? None. The Skeptics Association of India even held street demonstrations in Calcutta to show her illusions of "miracles". Having ringers in the hospital always helped, too.

What a creepy woman. If she's a saint, then so are Michael Vick and Scott Petersen.

And that Colombine girl story is a long disproven myth. Never happened.

a pope?

Jesus has a very special love for you. As for me, the silence and the emptiness is so great that I look and do not see, listen and do not hear.

As far as I'm aware she isn't a saint. I believe Sainthood should, with a few exceptions, be reserved for those who were martyred for their faith. For example, the young lady killed at Columbine.
