I have a recipe for Johnnycakes which I have never made before (I'm in New Zealand, and no one here really eats them, or pretty much anything with cornmeal!). I've made the batter but it looks too runny....

Here's the recipe:
1 large egg
1 cup stone ground cornmeal
1 3/4 cups whole milk
4 tablespoons melted butter
1 teaspoon salt

Will those proportions work or how can I fix it?

With most recipes tried for the first time, it is always advisable to add the wet ingredients to the dry ingredients slowly. Flours differ in the way it absorbs moisture from day to day - in relation to the humidity on the day, the type of grain etc: Corn is a coarser tougher grain, so If you allow cornmeal batter to sit for at least half an hour prior to cooking, you will find that it will absorb more of the liquid, therefore making the batter a little thicker - You may find that this will generally give you good results.
Johnny cakes are heavy(ish) pancakes, so the batter needs to be slightly on the thicker side.
Bon appetit! &
Seasoned Greetings ;)

No, it doesn't look right. To confirm, I just googled a few johnny cake recipes. They all call for a dryer mix. Much more cornmeal, sometimes flour too.

I'd suggest adding another 1/2 c cornmeal at least, but google recipes to get an idea of what the typical ratios are.

If you just add cornmeal until it looks right, you'll probably be fine. Maybe add a bit more butter too.

Well, my motto is, if at first u sont sucede, try again. The proportions do seem alittle on the runny side, but if u find that thats the case, just add some more dry ingredients. Dont add more salt, b/c that might add to much flavor, but sprinkle a little more ground cornmeal in, or leave out alittle milk, that should set it right.

I agree-too much milk. Add cornmeal a little at a time until it's seems right.
You guys don't eat cornbread? Man, talk about missing out!

Johnnycake

Gradually stir in:
1 cup scalded milk

Spread into a buttered 8x8 inch shallow pan. Dot with butter, cut in small bits.
