Luckily, Americans now have a ton of chocolate resources. First, check online. I recommend sources like epicurious.com, foodandwine.com, and sauce.com.
But really, if you're not into melting baking chocolate and all that, boxed cake mix with a few tweaks is great. Cream instead of milk, ALWAYS butter, and chopped dark chocolate works wonders.
I recommend any chocolate cake made with stout, though. AWESOME. Dense and rich, rich but not too sweet.

There's an easy chocolate cake you can make in one bowl called a "Wacky Cake" - it has no eggs so some people with egg allergies like to make this one. It's kindof a cross between a cake and brownie texture. Pretty good with fudge frosting on it that you can buy at the store.

Old school but GREAT mom's chocolate cake:
INGREDIENTS
1/2 cup shortening
1/2 cup unsweetened cocoa powder
1 cup white sugar
1 egg
1 cup buttermilk
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon vanilla extract
1 1/2 cups sifted all-purpose flour
1/2 cup hot water
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8 inch square pan.
In a large saucepan, melt together the shortening and cocoa. Remove from heat and stir in sugar and egg. Mix buttermilk with baking soda, salt and vanilla, then blend into chocolate mixture. Beat in flour. Stir in hot water. Pour into prepared pan.
Bake in the preheated oven for 30 to 35 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.

im not being smart aleck...but the box cakes that you just add oil and eggs to are extremely delicious and foolproof.
