I usually make a Potato and Cheese stuffing, 1 tablespoon of grated onions, 2 tablespoons of butter, 2 cups of cold mash potatoes, and 1 cup of cottage cheese: Cook the onion in butter until tender, Combine it with potatoes and cheese.
Season to taste with salt and pepper.

Try an onion/pepper/garlic fricasee of sorts. Just slice some yellow onions, bell peppers, and garlic, toss them with salt, black pepper, and paprika, and sautee or roast (my preferred method, I heart caramelization) use them as a bed for the pierogies.
Maybe slice and brown some polish sausages, as well?
Also, serving sour cream and chopped (FRESH!) chives is ideal with pierogies.

Sauerkraut and mashed potatoes are what I usually fix with pierogies. Sometimes I fry up some smoked sausage or Polish sausage to go with them, too.
Don't forget to brown some bread crumbs in butter and pour them over the pierogies. . . delish!

I always saute an onion (sliced in rings or half rings) and serve pierogies on the onions with a side of mild Italian sausage and some sour cream or plain yogurt.

A simple green salad, and polish kielbasa round out a meal....Or just have the pierogies & onions with sour cream,and applesauce and nothing else.It makes a fine meal by itself.

I usually make there perigees in a garlic and oil sauce with red and orange peppers with onions
and also add Italian sausage
or kielbasa cut into little pieces
then serve with some kind of garlic or Texas toast

My mom just usually just sautees them with onions. You could do rice and maybe steamed broccoli or carrots would be good.
