My pasta says, on the back, that 1 serving = 1 ounce.
Okay, but do they mean 1 once measured in volume, or 1 ounce measured in weight??
If it's measured by volume, then 1 ounce of that pasta would = 1/4 of a cup (because 8 ounces = a cup).
If it's measured by weight, then I'm clueless.

Also, when you measure the amount of pasta you eat, if it most accurate to measure before or after you cook the stuff? (I know it shrinks when it's cooked.)

that's in weight, and you measure it before you cook it, not after. 1 ounce won't look like a lot uncooked, but it absorbs water as it cook, so it will increase in volume.

One ounce is uncooked. The packages are labeled with number of servings per package right under the serving size. If it says 8 servings per package and it's an 8 ounce package, divide the package into 8 equal amounts. This will give you an idea of how big that serving should be, and in the future you can estimate.
