The recipe says to broil three inches from the heat for five minutes per side, but every time I do this my house fills with smoke. Is there a trick to it? (We don't have an outside grill, so this is not an option.)

Don't turn your broiler on. It sounds like you have no ventilation in you kitchen. Just turn the oven on to 350 F and let it roast that way.

I`ll have to agree with Tom K.If your broiler is smoking up the house like that there is either something wrong with it,or your oven may need a cleaning.Just roast it at 350 until it`s done to your liking.

My recommendation is to have a widow open as you preheat so what has spattered up onto it burns off, or to clean the elements before hand.
3"s is too close in my book, 6"-8" is my preference.

Roast it slowly in your oven, and add small amounts of liquid as needed during the process.

AFTER MARINATING MINE, I HAVE AN INSIDE GRILL AND WORKS BETTER THAN BROILING. MAYBE YOU ARE PUTTING IT TOO CLOSE TO THE BROILER?
