Why must odorants and tastants be dissolved before they can be perceived ?

Odorants need to be volatile so it can be transported to the olfactory system and it needs to be in a sufficiently high concentration to be able to interact with one or more of the olfactory receptors.

Whereas the tastrants need to be dissolved and mixed up with water (saliva) so that it can get into the taste buds and perceived by gustatory nerves.
