I'm trying to wrap up dinner and time my carrots and my pasta - how long do carrots take to cook fresh on stove?

It depends how big you have cut them.
Just stick a sharp knife in 1 of them every few minutes until there is not much resistance.

I always like truly simple...crackers with warmed brie for starters. warmed in the Microwave for a minute it is gooey heaven. Whilst you are enjoying a glass of wine or soda pop with the appetizer, dinner can be cooking. Chicken breast topped with your favorite italian dressing takes about half an hour in the oven. Wrap up two sweet potatoes and bake with the chicken. Fresh (or frozen) green beans sauteed with garlic and a can of stewed tomatoes round out the dinner. For dessert, nothing beats a scoop of her favorite ice cream resting on a pizzelle cookie with a sprig of mint and and a strawberr as a garnish. Total prep and cooking time...45 minutes.

Please don't cook them. Carrot souffle and carrot cake are the only reasons to cook carrots. Okay, they are also fine in soup but not as a solo side dish.
