Why all the differences in taste and caloric values?

With whole, 1%, 2%, lowfat and skin, the main difference is dairy fat (dairy cream).

Condensed is usually sweetened condensed milk where sugar is added and the milk is cooked down to a thick syrup consistency.

Evaporated milk has more fat than whole milk. It's whole milk that has been cooked down "evaporated" where about 60% of the water is cooked out.

Why the difference in flavors and calories?
Fat is flavor... the lower the fat content the more it taste like, and has the consistency of, water. Also, lower fat implies lower calories.

The difference in taste is varied. I had whole milk b/c its thick but I think the taste is the same between whole and skim just that skim doesn't leave a coating in my mouth. Condensed oh glorious condensed milk! Sweet and syrupy good for baking or eating straight from the can! Evaporated taste like whole and is thick as well.

My techniques are that something much less the full milk is a waste of money because it fairly is changed. Skim milk is fairly like eating water, and a waste of time.. you asked for my techniques and that's them.
