what is your favourite thing to do with left over roast besides sandwichs

Potato hash and eggs with roast.
Soup with lots of winter vegetables.
Cold cut up roast with horseradish mustard dipping sauce.
Tacos or burritos with salsa and sour cream.
Steak salad with lemon/garlic vinaigrette.
Or, just reheat it in the oven and have the same dinner the following evening. No harm in that!

Dice onion, potatoes and roast.
Fry in a little oil until done and smelling great!
Season with salt & pepper
This is a kind of hash and is really good with a fried egg on top.

I like to pull it apart, mix it with the leftover gravy, heat it throroughly, and serve it over a slice of bread, mashed potatoes, rice, noodles, whatever you want. It makes a quick and easy dinner.

Heat it up with some onion, jalepenos, seasoning & put it in a tortilla with cheese, lettuce, & tomato

If it is lamb curry it, I don't think curried beef is as nice, but give it a try.
