broccoli rabe and sweet Italian sausage


Tips: Cook the broccoli rabe the night before and you'll be way ahead. Whatever you do, read the recipe through start to finish before you get started. It's a little out of the ordinary but relatively painless.
2 bunches broccoli rabe, trimmed of damaged leaves hollow ends removed
4 to 5cup's of reserved cooking liquid from the blanching of the broccoli rabe
1 pound Angel Hair

4 to 5 cloves garlic, choped or to your taste

1-1/2 pound Italian sausage, cut into quarter-inch slices.
12 oz chicken broth
olive oil
Salt & Pepper to taste

1 cup coarse, seasoned bread crumbs, toasted, optional garnish

Pecorino Romano or Parmesan, optional garnish


Cut the broccoli rabe discarding the stems
In a large pot of rapidly boiling water with a little salt, blanch the broccoli rabe until just about tender and cooked through, about 4 to 5 minutes.
Before you drain broccoli rabe, reserve 4 to 5cup's of cooking liquid. Drain and rinse the broccoli rabe with cold water until it has cooled off. Spread it out on a towel to finish draining. or in a collinder after it is cool place in a bowl and store in the frig






now start the meat
turn heat to medium-low add 4 tablespoons olive oil & sausage stirring occasionally, until sausage is cooked about 5 to 7 minutes. remove the sausage from the pan and slice into 1/2 inch peaces and return to pan & simmer untill there is no pink add a little olive oil into the skillet with choped garlic and saute on low heat don't brown the garlic. at this time add the 12 oz of chicken broth and simmer. for 8 minutes then add 3 cups of the reserved broccoli water into the pan and cook untill boiling and then turn off and let cool place this mixture into bowl for later and add 2 spoons of butter

@ this time you will have a bowl of broth with meat and a bowl with reserved broccoli rabe and a bowl with broth from the rabe blanching
when you are ready to eat add the bowl of broth with meat and a bowl with reserved broccoli rabe and bring to boil

Meanwhile, cook the pasta in a large pot of boiling water according to package directions until al dente.
When the pasta is cooked, drain it and place back in pot you cooked it in and season with salt
Pour sausage sauce over pasta and stir in cooked broccoli rabe.




Pour reserved broccoli water into pan with sausage.

My favorite meal is homemade chicken or turkey and noodles! For the best quick and easy noodles use canned broth or stock, a teaspoon of Italian seasoning, and some frozen or canned peas and carrots!

I also love grilled chicken breast and parmesan tilapia fillets!
This grilled BBQ chicken breast is very flavorful.
4 chicken breast fillets
1/3 cup barbecue sauce
1 tablespoon honey
1/4 cup mayonnaise
2 garlic cloves, crushed
2 teaspoons fresh ginger, grated
Combine sauce, honey, mayonnaise, garlic and ginger.
Add chicken fillets to bowl and until well coated with the marinade. Cover and refrigerate for 3 hours or overnight.
Put chicken on oiled grill plate and bbq for approximately 5 minutes each side (longer if using large breasts), brushing occasionally with the marinade.

For a tasty fish fillet try this!
Dust 4 boneless white fish fillets in 1/2 cup flour. Coat with 1 beaten egg. Combine 1 cup dry breadcrumbs, 1/4 cup grated parmesan, 1 tbsp chopped mixed herbs of your choice, and 1 tbsp chopped nuts of your choice. After coating the fish in flour and egg, coat with the crumb mixture. Line a baking sheet with foil and place the fish on it. Bake for 15-20 minutes at 350 degrees.

CHOP SUEY CASSEROLE

1 8 oz package egg noodles
1 lb lean ground beef or chuck
1 tsp olive oil
2 onions, finely chopped
3 garlic cloves, finely minced
1 1/2 cups diced celery
1 green bell, finely chopped
salt and pepper, to taste
garlic and onion powder, to taste
1 can Campbell's Tomato Soup
dash teaspoon Worcestershire sauce
1/2 cup grated American cheese

Bring 5-6 quarts water to a boil then add a tablespoon of salt. Boil noodles according to package directions until al denté (slightly firm). Drain.
Brown ground beef or chuck in olive oil with onions, garlic, celery and green pepper, being careful not to allow garlic to brown to avoid a bitter taste. Cook until meat has browned and vegetables are tender. Drain off any excess oil. Season to taste with salt and pepper (and garlic and onion powder, if desired - don't overdo).

In a buttered casserole dish, alternate meat and vegetable mixture, noodles, and grated cheese. Combine soup with Worcestershire sauce and pour over layered casserole. Sprinkle with a layer of cheese.

Bake in a 325°F degree oven for 45 minutes.

I pick up a roasted chicken from the supermarket's deli. They also have lots of salads that I like such as their potato salad. We like green beans to go with this too. A dessert of some sort or ice cream.

home made chicken fried steak that my wife makes w/mashed potatoes and green beans, my fav. that i cook is grilled steaks w/ homemade biscuits and baked patatoes
