1 can diced tomatoes, drained
1 onion, diced
1 clove garlic, diced
2 jalepeno peppers, diced (more or less depending on how much heat you want!)
a handful of cliantro, chopped

Put all ingredients (except juice from tomatoes) into a food processor & process until the consistency you like, adding a but of the tomato juice for consistency.

Or if you like your salsa chunky, skip the food processor.

Ingredients:
2 sweet bell peppers
1/2 pound hot peppers
1 pound onions
1 pound tomatoes
1/4 teaspoon garlic powder
1 teaspoon cilantro
1 teaspoon salt
1/8 cup vinegar
1/4 cup oil




Directions:

Wash, stem and grind vegetables. Mix all ingredients in a large bowl. Cover and chill for 1 hour.

Cinco de Mayo Salsa

2 cups chunky chopped tomatoes (can use the sweet grape tomatoes)
1/2 purple onion finely chopped
3 avocadoes chopped, chunky
1½. tubs feta cheese
2-3 Tbsp. Kraft Greek Salad Vinaigrette

Toss and eat with nacho type chips.

Blueberry Salsa

Prep: 15 min.
This fruity salsa is a refreshing side to grilled pork, chicken, and fish.

2 cups chopped fresh blueberries
1 cup whole fresh blueberries
1/4 cup fresh lemon juice
3 Tbsp. chopped fresh cilantro
2 seeded and minced jalapeño peppers
1/3 cup diced red bell pepper
1/4 cup chopped onion
1/2 tsp kosher salt

Coarsely chop 2 cups fresh blueberries. Stir together chopped fresh blueberries, 1 cup whole blueberries, 1/4 cup fresh lemon juice, 3 tablespoons chopped fresh cilantro, 2 seeded and minced jalapeño peppers, 1/3 cup diced red bell pepper, 1/4 cup chopped onion, and 1/2 teaspoon kosher salt in a large bowl. Cover and chill until ready to serve.

Yield: Makes about 3 cups

Red Salsa: You Will Need:

2 large tomatoes chopped
1 medium white onion chopped
1/2 cup chopped cilantro
1 medium green bell pepper chopped
1 clove garlic finely chopped
1 medium lime squeezed (use juice only)
1 large lemon squeezed (use juice only)
1 medium jalapaneo pepper finely chopped
1 Tbls. salt
1 12 ounce can tomato sauce (about 1 1/2 cups)

Mix all ingrediants and eat!!!!! Very easy and very good!!

3 medium tomatoes, diced
1/2 c cilantro, diced fine
1 small onion
1 jalapeno
juice of 1 lime
salt to taste

Mix everything up and put in the fridge for an hour or so before serving. You may need to adjust the quantities of ingredients for your own taste.

1 big can whole peeled tomatoes
1 4oz can of jalepenos
1 4 oz can of diced chiles
about 6-10 green onions
garlic salt to taste.

mush up the tomatoes a bit. chop up the green onions. now add everything together and blend just a little bit , being careful not to overmix. mix in as much garlic salt as you like.
