I had some leftover turkey breast meat and I added some chopped onions, celery and carrots. I can't decide what to add at this point. Here are some options I'm considering...
(1) Should I add an egg and make a glorified egg drop soup?
(2) Throw in some dumplings for a Southern twist?
(3) Add some rice or noodles?
(4) How about some curry spice?

Any ideas?

I had Swanson's chicken stock on hand so that's what I went with. I may have to add some veggi stock since I'm now out of chicken.

My apologies to all the noodle voters. But in the end, my husband really wanted dumplings and I added some curry spice. I guess I have made Turkey dumpling & curry soup. It's very good. Thanks to everyone who answered.

Wow all those things sound really great...I am actually making a chicken and potato soup right now....I didn't like the consistancy, so I added some minutes rice and let it simmer away for awhile....I also added some shredded cheese....so those might be a couple of things you would like to consider

Any of your options will work great. But what type of stock are you cooking the turkey in? If you still have some turkey bones left throw them in to for that extra umph that make soup more satisfying. My mom would always add some bouillon powder or cube to the turkey when I was little.

I would do a combination of rice & egg. Turkey Rice & Egg Drop soups are gooooood so why not mix them together?

I think noodles would be great. Just made some and it was very good. I sauteed garlic and onions in olive oil before adding it to my soup.You don't need a lot just enough to give it flavor.I used fresh sage and rosemary..Hope it turns out well for you.
