Can my son and I play online at the same time from the same console? if not then how can we play one on one against eachother, or on the same team?

You can't go online at the same time, you would have to have 2 PS3's. 2 games, and 2 TV's to do that. Some games let you bring people in as guests, but COD4 did not include this feature.
You can play regular multiplayer (up to 4 people on a single console) against each other, by selecting "Split Screen" in the multiplayer menu. Honestly, though, it will probably get pretty boring after a while especially with only 2 people.
I'd recommend getting Warhawk. This game is a multiplayer only game that lets you bring guests into un-ranked servers (you can also host your own game and enable this option). It's like $40 on the PS Store plus $7.99 if you wish to get the upcoming expansion (adds a new map and dropships, but isn't out yet).
