It's important for you to pinpoint exactly what part of the potato chip you are allergic to. Can you eat potato in other forms, that either confirms or excludes potato itself. Then look at other ingredients. If it's not the potato itself then it is most likely the oil. This is where it becomes important to narrow it down.
