One belief is that when you sneeze your heart stops, and that is the perfect time for a demon to enter your body. By blessing someone it would prevent this from happening. Personally, I don't ascribe to this sort of thinking and when someone blesses me I get quite irritated. Mostly because it's a "white light" belief system that keeps this tradition alive. And that is an insult to my own way of thinking.

It was some old superstition that when you sneeze an evil spirit could either go into you or one was around or something like that, so people would say "God bless you." to ward it off.

Because when someone sneezes, it is their soul trying to escape their body. When you say "bless you" it stuffs the soul back in.

Because that's gross! People who fart should be ashamed, not blessed! Use your head! Sneezing is gross, but it's a condition, and you have to respect that.
