How else can I get my "daily 5-7" servings of fruits/veggies, besides the obvious way (eating them in the whole)? What constitutes a serving?

You can drink the juices of vegetables or you can prepare foods that has vegetables as the main ingredient (you can find these in many vegetarian/vegan recipes). I think a serving varies based on what you are eating.

You can drink juice, but you can also see that you can mix things together or add them to other food to get what you need. Clearly a banana in cereal and/or a quarter cup of raisins are one serving each of fruit, so you could get 2 servings in the morning if you did bran with a banana and raisins.

A nice salad which besides all sorts of veggies can include hard boiled egg, cheese, chicken, etc. would give you more servings.

Also you can dress up something to make it a relatively healthy snack--peanut butter on an apple, for example, is good. You could make your own trail mix--dried fruits would count. Wasabi peas (dried peas coated in wasabi) are a nice snack item. Smoothies can be very good--make with yogurt and some honey if you need a sweetener and you can put all kinds of fruit in there.
