My lovely Grandmother always sends us home from a visit with a bag full of groceries....... for which we are very grateful. HOWEVER, we now have half a drawer full of canned salmon.... At least 12 to 15 cans. I need some recipies please!!

Canned Salmon Casserole

The only way I can get my family to eat canned salmon is salmon patties. I leave out the corn and add a little flour sometimes.

INGREDIENTS:
1 can (1 pound) salmon, drained and flaked
1 cup corn kernels, canned or cooked
2 eggs, slightly beaten
1/4 cup ketchup
2 tablespoons finely chopped onion
2 tablespoon finely chopped red bell pepper, optional
1/4 teaspoon salt
dash ground black pepper
3/4 cups soft bread crumbs
PREPARATION:
Combine flaked salmon with corn kernels, beaten eggs, ketchup, onion, bell pepper, salt, pepper, and bread crumbs. Shape mixture into 12 patties. Heat vegetable oil in a heavy skillet; fry salmon croquettes for about 1 1/2 minutes on each side, or until croquettes are golden brown.

finely chop mild onions and sautee. Add onions to canned salmon with an egg & mix. I should warn you that the salmon looks pretty nasty at this point, but hang on, it getts better.

form the salmon into patties and fry like a hamburger. While you are waiting for that to get done, Put some frozen peas in a saucepan with butter, milk and flour. Stir until the milk and flour thickens. Then add seasoning to taste.

Pour the peas sauce over the salmon patties. It's suprisingly good.

I know one you can make a salmon salad. All you need to do is clean the salmon from the bones, cut up some onions as much as you want and cut up some tomato's. Put everything together then add some oil, vinegar and some salt. And you can serve that with white rice and your done. Hope that helps

Tinned salmon is just lovely mashed up with a fork, salt, pepper and malt vinegar (mayonnaise too if preferred) - put onto crusty rolls, with best butter (with or without cucumber). To accompany it have some bowls of handcooked crisps - Mmmmmm lovely.

It's very good for you as it contains healthy Omega-3 fish oils - as do sardines, pilchards and anchovies.

Tinned salmon will have been a luxury item for your Grandmother back in the day - and that is why she buys it for you.

Forget the food snobs - anchovies for example can only be purchased in a tin or jar.

BAKED SALMON CASSEROLE - CANNED

1 can salmon, boned
1 1/2 c. rolled crackers, saltines
2 hard boiled eggs, chopped
Salt and pepper
2 tbsp. butter, melted
1 c. boiling water

Mix well and put in casserole: salmon, 1 cup crackers, eggs, salt and pepper. Mix 1/2 cup crackers with butter and spread over top. Pour over all water and bake at 350 degrees until brown.

My mother made the best salmon loaf. It's sort of like meatloaf, only with canned salmon. I don't have her recipe, so I do a search for salmon loaf whenever I'm in the mood. I know there's a can of cream of something soup in it, bread crumbs, eggs, chopped celery, minced onion, and dill. If you can find one like that, you have to try it. It brings back memories of my mom.

Ground Beef Quesadillas, This is sooo easy and soooo good. take a pound of ground beef and brown it and ground it to nice little peices. season it generously with garlic salt, salt, pepper and a teaspon of california chilli powder. Chop up some fine pieces of onion and throw into the ground beef after a majority of the beef is now brown. grate some cheese of your choice.. I prefer some cheddar chesse but anyone you choose will taste delicious! while the ground beef is finishing browning find a pan that will allow you to put a whole flour tortilla in it. let the pan sit over meddium heat for two minutes. add a half a teaspoon of butter to the pan and let it melt to cover the whole pan.. sometimes I add a little extra butter but I like buttery quesadillas! after the butter covers the whole pan add a whole flour tortilla to the pan laying open. add the cheese first to one half of the tortilla, then over the cheese add a nice helping of ground beef, then if you like add a little more cheese over the ground beef for EXTRA CHEESY quesadillas. once everything has been added to your cheesy treat fold the tortilla in half and flip every 45 seconds or sooner if the tortilla is browning quickly. this should only take about 2 1/2 minutes to brown. if you have extra time on your hands some home made salsa goes perfect with this treat.. if not buy your favorite salsa and add it to the quesadilla at your own standards. other things that go well with it are sour cream, avacados, gaucamole and enchilada sauce is nice over the top but that is a whole different ball game!! This treat is pretty fast and easy and has a great taste!! good for parties!! Enjoy!!!
