Go to CruiseCritic.com, "Boards", "Ports of Call" - there will be info there from past cruisers about excursions good and bad. Shoretrips has generally gotten good reviews from CC posters.
BTW - Grand Cayman is a very easy port to do excursions on your own - it's safe, easy to get around, and things are pretty close to the tender port. If you've never been, you should do the stingrays [Captain Marvin or Nativeway are two good outfits - I've used them both]; it's an amazing experience, even if you're a "chicken" like me!

Have a look on the carnival website, and see fi there are any excursions there that you like. If you don't like the prices on the website, at least you'll have an idea about what there is to do in the ports, and then you can always find something on your own. Just make sure you pay attention to the times for getting back to the ship if you decide to do it on your own, and leave plenty of time to do that. You don't want to let something like a traffic jam make you have to find your own way to the next port...

Try Vacations to Go.com. We had booked many cruises through this site and had excellent experiences every time. We had gone to St. Thomas VI, and went off the ship to go on a nice excursion, we paid 12 dollars to ride a sail boat with two other couples.
It was beautiful, they sailed us around the Island of St. John's Island, we went shopping in town, ate at a few outdoor and indoor restaraunts. We took pictures and bought soviners. The nice thing about it was, the two guys who own the sail boat went back to St. Thomas to pick up more couples, and when they returned, they took us back to the ship. We gave them a nice tip...they were really friendly, and helpful.
We have been using "Vacations to Go" for five years now..their "Fast Deals" and "Last minuet Cruise Packages" are excellent..you have to check it out..at lease once..
We are sticking with them, no one comes closer to their prices..

www.shoretrips.com is a good one, but the way Vacations To Go doesnt sell shore excursions, but they do sell cruises. i myself prefer www.cruise.com--same prices, ! What I usually do is barter with the people right when you get off the ship.. In St. Kitts we got a 2 hour city tour with a beach stop for 1 hour for $10.00. It was AWESOME! Went to the rain forrest and everything. you can always negotiate waaay better prices than what is offered through the cruise.com
