2-7 1/2 cans minced clams
4 cloves garlic, minced or chopped
1/4 cup butter or margarine
1/4 cup olive oil
3 tbls. chopped parsley
Grated Parmesan cheese
1 Teaspoon salt

Drain clams, saving 3/4 cup clam juices. Set aside. In a skillet, slowly
heat the olive oil and butter, add garlic and saute until golden. Remove
from heat. Stir in clam liquid, add parsley, salt and bring to a boil.
Reduce heat; simmer uncovered 10 minutes, add clams and simmer 3 minutes
longer. Serve clam sauce hot over cooked spaghetti or other pasta and top
with Parmesan cheese.
This sauce will cover about 1/2 pound of spaghetti or other pasta.

Spaghetti Alli Olio (probably not correct spelling) is very very easy, quick and yummy. Cook some spaghetti or Linguini and then chuck the frying pan on. Heat up some oil (olive or sesame is beautiful for this dish), you will need enough to make it a sauce. Chop up a few cloves of garlic and some chirizo sausage and pancetta (or you can use bacon) into small cubes. Fry the meat in the oil. Drain off the pasta really well. Check the garlic into the oil and then a couple of seconds later add the pasta. Lovely!

This is my favorite recipe for White Clam sauce.

INGREDIENTS:

2 tablespoons olive oil
1/2 cup half & half milk
1 small clove garlic, minced
1/2 cup chopped onion
1/4 stick butter or margerine
1/2 teaspoon sea salt
dash pepper
1 can (about 10 ounces) minced clams, undrained
12 ounces pasta noodles of your choice: (I prefer fetucinni, or linguini, but spaghetti is OK, too.)

PREPARATION:
Heat oil and butter in a heavy skillet; add garlic and onion. Sauté for 4 to 5 minutes. Add salt, pepper, and undrained minced clams, and the half and half cream. Simmer for 5 minutes. Serve on hot cooked pasta of your choice.

Serves 4.
