Bought one to chop up and put in a stir fry as shown to me by a neighbour and it seemed to work, but I still have some left. Peeled the potato, chopped it into bits, now what do I do with it? Fry? Boil? Its a whole new game to me!

Sweet Potato Potato Salad

"Sweet potatoes and potatoes combine to make a different type of salad that will pleasantly surprise you."

INGREDIENTS
2 potatoes
1 sweet potato
4 eggs
2 stalks celery, chopped
1/2 onion, chopped
3/4 cup mayonnaise
1 tablespoon prepared mustard
1 teaspoon salt
1 1/2 teaspoons ground black pepper

DIRECTIONS
Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 30 minutes. Drain, cool, peel and chop.
Place eggs in a saucepan and cover with cold water. Bring water to a boil. Cover, remove from heat, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water; cool, peel and chop.
Combine the potatoes, eggs, celery and onion.
Whisk together the mayonnaise, mustard, salt and pepper. Add to potato mixture, toss well to coat. Refrigerate and serve chilled.

Sweet potato gratin


Serves 6



Preparation time less than 30 mins

Cooking time 30 mins to 1 hour







Ingredients
1kg/1lb 2oz sweet potatoes, peeled and sliced thinly - about the thickness of a 10p piece is ideal
2 tbsp olive oil
3 garlic cloves, finely chopped
½-1 red chilli (depending on variety and heat strength), chopped
finely (or 1 tsp dried chilli flakes - not powder)
250ml/8fl oz single cream
salt and black pepper



Method
1. In a large mixing bowl toss the sweet potato slices with the oil and all the other ingredients until the slices are well coated and the garlic and chilli well-distributed.
2. Transfer to a lightly oiled gratin dish, spreading out the slices with your fingertips, you do not have to layer the gratin piece by piece, but try to ensure that the slices are mostly lying flat.
3. Pour over any cream remaining in the bowl and trickle the remaining oil over the gratin.
4. Bake in a preheated, fairly hot oven (180C/350F/Gas 5) for 40-50 minutes until the sweet potato is completely tender and the top is browned and crispy.
5. For extra crispness you can finish under the grill for 1-2 minutes.

iv noticed that sweet potatoes which are store bought from the supermarket tend not to have any flavour after you boil it or fry it.
i put mine in the oven as a baked potatoe.
you still pri ck the skin of it and leave it to cook for about 1 hour
the sweet flavours are just bursting out of it.. so much that you dont even need butter to sweeten it... hhmm i want some now :(

the best place to buy the potatoes are at the open markets which you tend to find in the more black areas.. those are the best quality sweet tasting ones you will ever find.

The easiest thing to do is make them just like a baked potato.
Wrap them individually in foil and bake at 350 degrees for about an hour or until a knife inserts easily. Cut open, put butter and sprinkle with brown sugar to taste. We do this often throughout the year to vary from plain potatoes. Its great with baked chicken. Since you already cut up the sweet potatoe, you can still basically do the same thing. wrap up your chopped sweet potatoe in foil, but to avoid drying out, add a few pats of butter, olive oil, margerine, etc. I also like to add the juice of a squeezed orange . When cooked open up and sprinkle brown sugar or pancake syrup.

You can do anything with a sweet potato that you can with an ordinary one. Depending on how much you have left you could slice some, layer it with sliced onions and garlic, salt and pepper and any herbs you like, pour over egg and milk beaten and bake for about 40 45 mins.

You could boil it, mash it or bake it.

Personally I cannot stand the stuff, but each to his own. Good luck and I hope it helps you.

What wedo is fry them in olive oil with some rosemary, and do the same with some cubes of normal potato. The rosmary brings out the flavourr of the sweet potato nicely.

I personally find boiled sweet potato rather boring, but friend with olive oil it tastes delicious, and isn't too unhealthy. And let us not forget how many vitamins a sweet potato contains! Lots.

SWEET POTATO SOUP WITH LEEK AND DILL

2 med. sweet potatoes, about 1 lb. total
2 med. leeks
2 tbsp. chicken stock or water
1/2 tsp. dried dill
1 1/2 c. skim milk
4 tsp. shredded part-skim Mozzarella

Peel the sweet potatoes and slice into 3/4 inch chunks. Trim the leeks, split lengthwise, and wash well to remove all grit. Coarsely chop. Combine the sweet potatoes, leeks, stock and dill in a 1 1/2 quart dish. Cover with vented plastic wrap, and microwave on high (100%) until the sweet potatoes are just tender, about 4 minutes. Let stand for 4 minutes. Transfer to a food processor or blender and whiz until smooth. Pour the milk into a 2 cup measure and microwave, uncovered, on high until warm, about 1 1/2 minutes. Whisk the milk into the sweet potato mixture. Serve warm in heated bowls or mugs, sprinkled with the Mozzarella. Or try as a casserole by adding cooked, chopped chicken and warming the finished product. Serves 4.

Sweet potatoes (yams) are very good prepared just like baked potatoes. Scrub thoroughly and remove any surface defects but leave skins on. Wrap each in aluminum foil and place on middle rack of oven. Bake at 500 dgrees for about 1 hour or until soft (use oven mitt to squeeze). Carefully remove foil to serve. Split and add butter, cinnamon and brown sugar for a delicious treat. They are addictive. iam cooking sweet potatoes tonight wash them cut them into chunks put them into a pan and quarter boil them for about 8 mins at the same time put some oil into a baking tray and heat the oil for 5 mins then drain the potatoes and open a packet of squartz sage and onion mix or any flavour you want cajan is nice to buy them at any supermarket 89p
shake the mix over the potatoe chunks until they are all covered then place them on the baking tray turning them to make sure they get oil on them then bake for approx 30 mins check they are cooked by putting a knife into tho potatoe they are gorgous you wont want any other patatoe again goodluck

There like normal potatoes as far as I am aware - boil them, then pop them into the over, i like them like that. Or to make them a jacket - 4 mins mircowave, 2 mins oven. Frying is always nice aswell, preheat your pan and cook on low heat otherwise they'll burn...

And im 17!
