Many people have suggested a stethoscope, and that is a wonderful gift. Nurses need a good one, and usually did not get a good one while in school. But make sure she has not bought a really good one already. If you go to a local uniform store or medical supply store they will have a wide variety of scopes in lots of colors, it would be best to know what her needs are first.
I personally use, and prefer the Littmann Cardiology stethoscopes by 3M. There are several similar brands but they lack the sound quality. The best choices are the Master Cardiology and the Cardiology III (my personal choice).
If you get a stethoscope for an RN get a 27 inch or longer tubing as the patients are usually lying down or in awkward positions. They make shorter tubing, but then you have to bend closer to hear and it is hard on the back after a long day.
There are many adds that will use similar names and even add a Littmann name tag, but if you read care fully, they will be inferior brands.
In stethoscopes you get what you pay for.
Unfortunately, with a really great sale, you might find one of these for $175 but they are usually over $200.
The idea of a spa day is also good, as new nurses often need to decompress after the reality of the clinical setting sets in, and before they have learned how to do the job completely.

Stethoscope - get it engraved with her initials or name with the "RN" behind it.
Some nice little charm jewelry that has a nurse's hat or something similar.
A membership with the American Nurses Association.
A subscription to the AJN - Americn Journal of Nursing, or if she wants to work in a particular specialty area, such as Critical Care, or Psychology, etc., find the nursing journal that is targeted to that specialty, there are plenty out there.
A nice pen set, also engraved with her name and RN.

Gift card for some nursing shoes, clogs that she might want.
Or how about something just for her that has got nothing to do with nursing, something that would pamper her (spa gift certificate, salon gift certificate, sephora gift card). She needs a break after all that hardwork in school.

While job-related things are nice, you could also think about when she gets home. Hospital nursing is brutal--feet and back especially get so sore. Maybe a foot massager or back massager of some sort?
