When I was a child in the 50's and 60's my mother would make potato patties out of left over mashed potoes. I have tried to duplicate this but no luck. I thought she just made the mashed potatoes thick and after they sat in the fridge over night made patties and fried them. This did not work for me.

Has anyone done this? I am beginning to think this was my mother's invention.

I meant patties not parries. I used spell check but did not check for the wrong word. What a difference a wrong keay makes.

Those suggstions sound good. My mother did not add anything just fried patties, but I may like y'alls better. I will show these to my wife and see what she thinks.

You have to add stuff! I think the eggs will make the difference.
2 cups mashed potatoes
1 large egg, beaten lightly
6 tablespoons all-purpose flour
11/2 tablespoons grated onion
2 tablespoons chives
Salt and pepper

Try this one:

Leftover mashed potatoes (about 1 quart)
1 onion, diced
1 egg
1 c. cheese, grated
Flour
butter
Salt and pepper

Combine mashed potatoes, onion, egg and cheese. Shape into large size balls. Roll into flour and flatten into patties. Melt butter in frying pan and brown for about 5 minutes on each side. Salt and pepper to taste.

If you don't have that many potatoes, don't use that much stuff in them. My Mama never put the cheese in them, but I found they tasted pretty good that way.

Mash 'taters stick to most fry pans except for a WELL seasoned cast iron skillet. [Grannys secret y'all!]
I've always made the mash 'tater patty then dip in buttermilk-n-egg wash, then in flour, again in egg wash then into breadcrumbs. Fry in hot cast iron skillet {i use lard} until golden brown.

For the Reverends "Twice baked, over stuffed fried 'tater pattys";
mix in some stuff into mash potatoes before making patty, like bacon bits, chives, sour cream, ? /??????
Also helps to chill the patty prior to frying.

you have to add egg to the mashed potato,and then coat them in flour before frying

add egg and flour and seasonings to your cold potatoes the fry in butter

I know what you're talking about. I've tried it myself and they just fall apart. I wonder if they could somehow be breaded?

Try foodnetwork.com...I've seen them do that on there.
