I would have to say Prawns are one of my favorites as well. Fish depending on what you like firmer fish go with a tuna steak or swordfish, more flaky then you would want some
salmon if you want very flaky quite brittle the sole is what you
want.
Sauces for the tuna and the swordfish I would recommend a fresh tropical fruit salsa like mango, papayas. bell peppers, cilantro, jalapeno peppers, fresh lime juice salt and pepper. Mix and enjoy the amounts depend on how many your serving. Say for yourself half a mango, quarter of a normal sized papaya, quartter of bell pepper, the rest is for heat and seasoning to your tastes.
For the Salmon a nice white wine cream sauce or a roast garlic cream sauce.
For the sole if you poach en papillote style meaning in parchment with lemon and spioces and veggies the natural juices will be enough if not could get away with the same as the salmon.
If you love prawns then try this sometime if you have the talent not to burn the house down saute some prawns in a very hot pan with some olive oil, remove pan from heat splash with some pernot or other licorice flavoured liquor then lite as in flambe cook until flame is gone, slowly add some heavy cream bring back to simmer take off heat and add cold butter to thicken pour portion amounts over some linguine or what ever pasta you like also works well with basmati rice. This is a common french dish called prawns amoroux as in to die for.
Personally another of my favorites is Halibut and crab now having them both well can you say awesome start with some decadent crab cakes then have a nice grilled halibut steak.
With some great Australian Chardonney like Lindemans bin 65 fore instance. Hope I have given you some ideas to ponder. God Bless and happy eating.
