Easy Christmas Cookies:
36 cookies
4 cups miniature marshmallows
1/3 cup margarine
3 1/2 cups crisp rice cereal
1 1/3 cups candy covered plain chocolate candies (or peanut chocolate)
Melt together marshmallows and margarine in heavy saucepan over low heat, stirring occasionally until smooth.
Pour over combined cereal and candies; toss until lightly coated.
With greased fingers, gently shape mixture into 1 1/2-inch balls.
Place on wax paper.
Let stand at room temperature until set. Makes about 3 dozen cookies.

Chicken and Dumplings... My mom's recipe is the best. Put a whole raw chicken in a large pot of water and boil it. We also put tony cacciere's (sp?) seasoning in the water as well as chopped onion, garlic, salt, and pepper. Once the chicken is cooked, remove the chicken from the stock (but save the stock.. this is your broth). Set the chicken aside to cool and bring the stock back to a boil...Add about a half a jar of chicken bouillon granules to the stock. Pull the chicken from the bones and put it back into the boiling stock (this should be a low boil, not a rolling boil). Now for the dumplings we use just cans of pillsbury biscuits. Roll them out and slice them pretty thin, they blow up A LOT when they cook. Just drop the pieces in slowly and stir often. It comes out really thick and hearty. It's a favorite dish in the winter! i can't wait until it gets a little colder here to make it!

Avocado Rolled Chicken with Spinach Recipe
Although this may initially look and sound like a dish of some complexity, please believe me that it is anything but. It is actually very simple and quick to prepare.
Per person, you will require:
1 skinned chicken breast fillet
1 small avocado (stoned and peeled - see end of recipe for simple instructions)
1 clove of garlic (crushed)
1 small red chilli pepper (deseeded and very finely chopped)
Handful of fresh spinach
4 or 5 walnuts (roughly chopped or crushed)
Salt/freshly ground black pepper
Olive oil
Put the oven on to preheat to 200 degrees centigrade or equivalent. Mash the avocado in a bowl with a fork and add the garlic and chilli pepper. Season and mix well. Lay the chicken fillet smooth side down on a chopping board and either with a meat tenderising mallet or a rolling pin, gently bash it to a thickness of about 1/4 inch (1/2cm.) Care is required here or the tender flesh will come apart - remember it is not a beef steak! Spread the avocado mix evenly over the flattened chicken and carefully roll it in to a tube. Lightly sprinkle some olive oil over the base of a casserole dish and place the chicken inside. Cook for 25 minutes.
Toss the spinach leaves with the crushed walnuts and lay on a serving plate. Remove the chicken from the oven, transfer it to a chopping board and after allowing it to rest for a few minutes, slice and arrange over the salad.
Avocados
The process of removing the stone from and peeling an avocado is very simple if tackled correctly. Sit the broad bottom of the avocado on a flat surface and hold it steady with one hand. A sharp knife should then be used to cut down through the top centre until you feel it hit the stone. Turn the fruit slowly away from you so that the knife effectively traces a pattern around the entire circumference. The two halves should then be twisted gently in opposite directions and should come apart quite easily, the stone still embedded in one of them. Tap the sharp blade of the knife once, gently but firmly, on the stone. The knife should cut in to the stone and a gentle twist should remove it. The two halves can now be peeled quite easily by hand.

Christmas Ice cream pie
prepared pie crust - such as oreo cookie crust
half gallon of peppermint ice cream
magic shell chocolate
candy cane - crushed into small bits
Use a prepared pie crust - such as keebler oreo cookie crust
Warm up peppermint ice cream until it is soft enough to be scooped out. Spoon out, and spread into the pie crust. Sprinkle the candy cane on top and drizzle the magic shell over the top. Put back in the freezer to get hard.
When you are ready to serve - let it warm up for about 10 or 15 minutes before trying to cut.

Your Mother, as all of us Mothers, will be VERY busy Christmas morning- making sure pictures are taken, ribbon is saved, coffee and chocolate are poured, and that one present she left in the drawer gets remembered and slipped in at just the right moment. So- You tell her Christmas Eve that you have breakfast handled. Wow- Lets just call you Santa. ( and start on christmas eve- this has to rest overnight...)
Christmas Morning Casserole
2 pounds hot bulk sausage (mild can be used)
8 slices bread, crusts removed
3/4 pound grated sharp cheddar cheese
8 large eggs, beaten
3 cups milk
1-1/2 teaspoons salt
1-1/2 teaspoons dry mustard
In a large skillet, brown sausage, crumble and drain. Butter a 9x13 inch casserole dish. Place bread (torn into bite-sized pieces) in bottom of dish. Place sausage on top of bread. Sprinkle cheese over top. In a large bowl, mix beaten eggs, milk, salt and dry mustard. Blend well. Pour over other ingredients. Cover and refrigerate overnight. The next morning, bake at 350 degrees for 45 minutes uncovered.. Slice into squares.

Christmas Cake
1 box yellow cake mix
red gelatin, your favorite flavor
green gelatin, your favorite flavor
whipped creamp
marachino cherries
Mix and bake cake according to cake mix directions. Let cake cool. With the end of a wooden spoon, make shallow holes in the cake (do not poke all the way to the bottom of the pan). In two separate bowls, mix red gelatin and green gelatin according to box directions. Then use a ladel or large spoon to pour red and green gelatin over cake and into holes. The red and green gelatin should make a swirl. Refrigerate for several hours then top with whipped cream and cherries.
Christmas Pie
2 cups crushed Oreo cookies
1/4 cup butter, melted
1/4 cup green creme de menthe
1 7-ounce jar of marshmallow creme
2 cups whipping cream
maraschino cherries
Mix together cookie crumbs melted butter. Press crumbs to bottom and sides of a 9 inch pie pan. Chill for several hours.
Mix together marshmallow creme and creme de menthe until well blended. Fold in the whipping cream. Pour into pie pan over cookie crust. Top with maraschino cherries.

I think a nice breakfast would be the best thing to make on Christmas morning for her. Make some nice scrambled eggs and bacon and buttered toast since the odds are she is going to be making the Christmas dinner...or buy a package of pancake mix and just follow the instructions on the box. You are so sweet to do that for your mom...I would love that if my kids did that for me.

How sweet of you....this is my special super easy christmas appetizer recipe.
Make meatballs with ground beef and fry them up in the pan till they are brown. Get a jar of currant jelly put in with the meatballs, then take a tsp of prepared yellow mustard and mix in the sauce, and simmer till hot. Sounds funny but it tastes so good. You can put toothpicks in them and save the sauce for dipping. ITS GOOD.....

hope you have a crock pot....buy choc. bark at store ,ask for help. melt choc on crock on low till smooth add salted peanuts stir and drop onto wax paper by teaspoonful let cool . that's it peanut clusters
or melt white choc. in crock pour onto wax paper lined cookie sheet and sprinkle crushed candy canes all over when cool break into three bite pieces. can dip pretzels into white choc too that my fav. coll on wax paper don't for get the wrapping of the gift is as fun as the gift itself
