Water always works as a substitute...I've never had a problem using water for milk.

I need to make some vegan muffins which call for Soy Milk. My granddaughter is allergic to all dairy, incuding eggs and nuts. But where I live no stores carry plain Soy Milk. So the recipe calls for 1 cp of Plain Soy Milk can I use water instead? Help :)

If u have vanilla ice cream it will work. I know t sounds strange but because its dairy, it does the same thing for the recipe that milk would do. You might not need to use as much ice cream as u would milk though. Another few things that will work are: sour cream, plain yogurt, coffee creamer, and evaporated milk. Almost any kind of dairy product will add the texture and flavor that milk does.

It depends on the purpose of the milk in the recipe. If it's something like biscuits, where the milk is just acting as a fluid to moisten the dough, they substituting water will not taste as good but work fine.
OTOH if it's a thickener, like in a custard, there's probably no good substitute. If really necessary, watered down plain yogurt might work, or evaporated milk like someone else suggested.

Depends on if you are just out of milk or for some other reason. I have taken a non dairy creamer and mixed it with water for mac and cheese or mashed potatoes when I was out of milk. Just using water in place just doesn't taste that great. Too watered!
