I am looking for a real good blue cheese. Strong flavor but not to creamy. And maybe to go along with a bottle of Pinot Grigio. But I can work around the wine.... Any Suggestions?

Have you ever had a hot grilled steak with gorgonzola (Italian blue cheese) sauce poured generously over the top? That's my favorite way to eat blue cheese!
