TURTLE PECAN CHEESECAKE

CRUST:

4 c. graham cracker crumbs
12 tbsp. melted butter

Combine graham cracker crumbs and melted butter; press mixture onto bottom and sides of buttered 10 inch springform pan (2 inches deep). Bake in preheated 350 degree oven 10 to 15 minutes. Set aside to cool.

FILLING:

1 (14 oz.) bag light (vanilla) caramels
1 (5 oz.) can evaporated milk
1 c. chopped pecans, toasted (see note)
4 (8 oz.) pkgs. cream cheese, softened
1 c. granulated sugar
4 eggs
2 tsp. vanilla
1 c. semi sweet chocolate morsels, melted

In heavy 1 1/2 quart saucepan, melt caramels with evaporated milk over low heat, stirring frequently until smooth. (If desired, dip a few pecan halves into caramel mixture and set aside to use later as garnish.) Pour caramel mixture over cooled crust; top with chopped toasted pecans.
Combine cream cheese and sugar, mixing on medium speed with electric mixer until well blended. Add eggs, one at a time, mixing well after each addition. Add vanilla. Blend in melted chocolate. Pour mixture over pecans and caramel in crust, starting at outer edge.

Bake in preheated 350 degree oven 1 hour and 20 to 25 minutes, or until edges begin to crack. Remove from oven and let cool at room temperature for 30 to 40 minutes. Cover and refrigerate overnight. Remove sides of pan and loosen cheesecake with spatula.


CHOCOLATE TOPPING:

1/2 c. semisweet chocolate morsels
3 tbsp. evaporated milk (see note)
Whipped cream (optional for garnish)
Pecan halves dipped in caramel (optional for garnish)

Melt chocolate morsels (in top of double boiler or on medium power in microwave oven). Add evaporated milk (or 2 percent milk and butter; see note). Stir until mixture is smooth.
Spread chocolate topping over chilled cheesecake. Garnish with dollops of whipped cream and pecan halves dipped in caramel, if desired. Keep refrigerated.

Makes 1 (6 pound) cheesecake: 16 to 20 servings.

Mini Absolutely Almond Pound Cakes with Rhubarb Strawberry Filling


Ingredients
Absolutely Almond Pound Cake Mix™
1 cup water
3/4 cup (1 1/2 sticks) butter, melted
Rhubarb Strawberry Fruit Spread
Powdered sugar

Directions
Prepare cake mix as directed on package with water and butter. Line muffin tin with greased paper liners. Spoon the liner about 1/3 full with batter. Make a well in the batter; add 1/2 tablespoon Rhubarb Strawberry Fruit Spread. Top fruit spread with additional batter until the cup is about 3/4 full. Bake at 350° for 20-22 minutes. Dust with powder sugar; serve warm. Makes 10-12 servings.

We always make my grandmother's winter fruit salad for Christmas dessert and have it with cookies.
Fruit Salad Dressing
1 egg - beaten
1/2 cup sugar
2 Tbs. cornstarch
2 Tbs. lemon juice
juice from a 20 oz. can of pineapple chunks (keep chunks)

Stir all of the above together, then cook and stir over medium heat until it comes to a boil. Boil for one minute to cook the cornstarch. Cool to almost room temperature.
Add 2 cups Cool Whip and 1/4 # mini marshmallows. Keep covered in refrigerator until ready to use.

Combine in bowl the pineapple chunks and then your choice of other canned and fresh fruits. We use (drained) peaches, pears, apricots, fresh red grapes (sliced in half) and bananas. Mix fruits lightly with the chilled dressing. Toss in some chopped pecans shortly before serving (else the nuts will turn the fruits dark). Serve and top each with a marachino cherry.

We were talking about this recipe this summer at a family reunion. I had to send it to my cousins - they remembered loving it, but didn't find it in their mother's recipe box after she died.

Cranberry Trifle
2 cups cranberry sauce
3/4 cup sugar
1/2 teaspoon vanilla
1 cup white chocolate chips
2 cups heavy whipping cream
1/4 cup powdered sugar
1-1/2 cups chopped semisweet chocolate chips
1 angel food cake
1 cup chopped pecans, toasted
1/2 cup grated white chocolate

You can use whole berry cranberry sauce, or the gelled kind in this recipe. For the whole berry sauce, just combine it with the sugar. For the gelled kind, break it up with a fork and melt slowly in the saucepan, then add sugar.

In medium saucepan, combine cranberry sauce, 3/4 cup sugar, and vanilla. Heat slowly, stirring frequently, over low heat until sugar is dissolved. Set aside to cool.

In large microwave safe bowl, combine 1 cup white chocolate chips with 3/4 cup heavy cream. Microwave on low for 1 minute, then remove and stir. Microwave for 30 second intervals, stirring after each interval, until chips are melted and mixture is smooth. Chill in the refrigerator until cold, about 30 minutes. Add remaining whipping cream and powdered sugar to the melted chip mixture; beat until stiff peaks form.

Cut angel food cake into 2" squares. In a large bowl (preferably glass to see the layers), layer cake, cranberry sauce, whipped cream mixture, chopped chocolate, and pecans. Continue layering until all ingredients are used. Sprinkle grated white chocolate over all; cover and chill for at least 4 hours. Serves 12

My family always made a cake (any kind) with white frosting on it. We used some food coloring to die coconut flakes yellow, and sprinkled them over the top. Press a small plastic figurine of Baby Jesus in a manger in the middle of the cake. You have just created an adorable (and edible!) nativity scene.

For 11 people, you would need a few different desserts.

I would suggest cheesecake, Christmas cookies (sugar, chocolate chip, etc). Also, you could make a tiramuso or a chocolate mouse pie.
