Since Hurricane Katrina there is a lot less service into New Orleans. The city has less than half of the former population. A lot of the connections are through Chicago. Don't be surprised if the New Orleans leg is on a regional jet.

not that I've ever heard of. Air Canada is the only carrier that uses Montreal as a hub (although a lesser hub than Toronto or Calgary), and I don't know of any major carrier hubbing out of NO. That means transfers somewhere.
