i'm icing gingerbread cookies as gifts and i was wondering if there was an easier way without the bag

Sure there is. Just put the icing in a ziplock bag, cut a very small hole in the bottom corner of the bag and Voila!. Just throw the bag out after. I use Glad sandwich bags.

Take a ziplock bag and cut the corner off of it. Make it a large or small hole depending upon the width you want the piping to be.

You can also put any of your piping bag attachments on the end of it I believe for designs.
