That sounds like a sweet thing to do for your parents!
You could do some nice scrambled eggs, topped w/ shredded cheese while hot (if they like that), maybe some cinnamon-raisin toast w/ some apple butter (buy in jelly aisle), and strawberries and grapes.
I"ll bet you could also bake a loaf of banana bread. It's just simple to do! Make a day or so ahead and just toast their slices that morning. (Recipe below)
You can omit the ham on this recipe... assemble the nigh tbefore and just toss in the oven Cmas morning.
** Farmer's Brunch Casserole **
3 cups shredded hash browns (fresh or frozen)
3/4 cup (3 oz.) shredded Monterrey Jack Cheese
1 cup diced fully cooked ham
¼ cup sliced green onions with tops
4 beaten eggs
1½ cups milk
¼ tsp. pepper
Optional ingredients: Sliced fresh mushrooms or diced green bellpeppers
Preheat oven to 350°. Spray 2 quart baking dish / pie plate with nonstick spray. Arrange
potatoes evenly in the bottom of the baking dish. Sprinkle with cheese, ham and green onions.
Combine milk, eggs and pepper. Pour over potato mixture. Bake uncovered for 40-45 minutes until center appears set. Let stand for 5 min. before slicing. Serve with fresh melon wedges and fresh berries and sweet bread / muffins.

** Banana Bread **
2½ cups flour
1 tsp. salt
2 tsp. baking soda
1 cup Margarine
2 cups sugar
2 cups mashed ripe bananas (4-6)
4 eggs - slightly beaten
Variations:
1 cup chopped walnuts
½ cups mini chocolate chips
½cups craisins
Preheat oven to 350°. Grease and flour pan (muffin or loaf pan)
Stir & toss together flour, salt, baking soda, set aside.
In a large bowl combine margarine, sugar, eggs and bananas until well blended.
Add the combined dry ingredients until batter is thoroughly blended.
Pour into loaf pan or muffin tins.
Baking Instructions & Timing:
Full recipe makes:
4 mini loaf pans ( 45 mins..)
24 mini muffins (15-17 mins..)
18 regular Muffins ( 25 mins..)
2 loaf pans ( 65-70 mins..)
Muffins & bread will turn dark brown, Check center for doneness with a bamboo skewer.
Remove from oven, let cool for 5 minutes before inverting

Plain yogurt in a bowl w/ some honey on the side. Is very chick. Also you could have some honey dew melons or watermelon for breakfast is healthy and fresh. What I am saying any fruit beside bananas would be nice. I know that youhave scrambled eggs in mind. I just want to let you know the last time that I try to do it by surprise they all woke up w/ the smell. So maybe a dropped egg on toast would be a better idea.

Ok, what about making french toast, with fruit sauce, which will be easy, yummy, fun. Take several slices of day old bread, set aside. Break 4 eggs in a bowl, add in a 1/4 cup sugar, some vanilla, and nutmeg, a cup of milk or half and half cream, mix. Add your bread slices one at a time. While the bread soaks, heat your pan with a bit of butter, adding in your slices. Let the bread begin to puff up, and flip over. Your french toast will get really light and puffy, and speckled. Do this until all slices are cooked and keep warm.
Make your fruit sauce with some jam, a bit of orange juice, and heat until a bit thin, add in some cut up fruit, vanilla, sugar, and a pinch of cornstarch to thicken. Spoon over your french toast and dust with powdered sugar. If you still want to make the eggs and toast too, do it, but the french toast is usually really filling and festive.

I think fruit would be fine,,,why not offer in addition to the strawberries,,,some cut melon like cantaloupe and maybe a few grapes. Have some juice, apple or orange,,and ask if they would like some cheese...maybe have some cheddar or Munster...that would make a nice healthy breakfast and shouldn't interfere with any medications or health problems that might have like hypertension, or heart problems...some people are picky about their food because they have to be...my DH and I are on a low sodium diet...

If Mom and Dad like fruits, they may like Jam/Jelly.
Get an assortment of small jars.
Strawberries and Mangos, Bananas and Kiwi go well together as a fruit salad. The colors are fun and bright and these fruits are all available this time of year.
An assortment of cheese might be nice as well.

You could make some fried eggs with sauted tomato and mushroom to serve on the side.
Then have a small fruit platter with coffee and juice.

Strawberries are nice. How about adding some mango slices, or canteloupe? Perhaps you can serve them croissants and nice jam instead of the toast, just to make it a little fancier. And round it out with juice and coffee or tea.
