I'm thinking about just leaving it out in the pan overnight and using the same oil again. Is there any reason why I shouldn't do this?

You can do it. Just cover the pan.
You can do the same with a deef fryer.

If the oil has been well taken care of, it should be fine, especially if you are deep frying. Here are a few things to watch out for:

1. Make certain it hasn't burned.
2. Make certain that you strain it and that you replace any work out oil. Also make certain that you don't need to add any oil.
3. If you had something in there before, you might want to watch the taste. Certain strong flavors like chili peppers may transfer through the oil. when you make the recipe again, the flavor might be stronger.
4. Don't use it if you strain the oil and find that some perishable food morsels managed to sink to the bottom and spend the night in an oil bath.

You can leave it out and use it tomorrow. No problem. If ti's something like fried chicken where you get lots of crispy critters on the bottom, you may want to strain it.

If the oil isn't burned, then just let it cool off and then cover it to be reused tomorrow.

You may find that in the dish that you cook tomorow you will find the flavor of the last meal cooked in it.
