First of all your meals sound fantastic!
I know for me when I'm starting to get bored with food, I start to learn about different cultures, what they eat and how they eat and it picked me up. I try to do hotter climates during the summer like Thai, and spanish, and during the winter I try for cultures that are colder like German food, or Russian.
Shepards pie is my favorite. I'm a vegatarian so I make mine with mushrooms and mushroom gravy instead of meat, but you can do it either way. Whatever meat you have cubbed, a simple gravy and some vegetables. You can also add mushroom even if you are doing meat. Then mash some potatos (make two servings and freeze one) top meat and gravy with potatos, shreaded cheese and put under the broiler until cheese is bubbly.
Very good with side salad!

Good comfort foods: Meatloaf, Lasagna, Soups - Baked Potato, Beer Cheese, Ham and Bean, Chili. Chicken Pot Pie, Roast Chicken - make two chickens at the same time, then cut one up into shreds, and you will have lots of good meat leftover to do other recipes during the week, as well as for sandwiches.

Make Lasagna, my recipie is
1 jar of ragu sauce
3-4 Italian sausages
1 medium to small onion, diced
salt, pepper, season all, and Italian Spice to taste
Thin the sauce with burgundy(or some other drinkable red wine) instead of water
Cook on stove for about 45 min to an hour then assembe dish and make in oven for about 45 mins.
Or
Make Fried shrimp in Zatarans fish fry, it works on other seafood, chicken, and some vegies as well.

******THICK 'N HEARTY CHILI
2 lbs. ground chuck
3 cans tomato soup
1 pkg. Lipton onion soup mix
2 cans kidney beans, drained
1 green pepper, chopped and sauteed
3 tbsp. (or more) hot Mexican chili powder, to taste
2 tbsp. jalapeno peppers, finely chopped plus 2 tbsp. juice
Brown ground chuck and drain well. Add remaining ingredients, adjusting chili powder and jalapenos to taste. Simmer over low heat for 20 minutes. Serve with shredded cheddar cheese and corn bread.
**********CHICKEN & DUMPLINGS
2 cans of can butter biscuits
1 can Cream of Chicken soup
3 bouillon cubes
1 tsp garlic salt (optional)
3 to 4 boneless chicken breast
Boil chicken breast until done (20 minutes). While chicken is boiling, prepare dumplings.
Roll out can of biscuits on a work surface sprinkled with flour. Make them as flat at you can and check that they have a light coating of flour. Set them aside.
When chicken is done, remove from pan and set aside to cool, saving the water in the pot that the chicken was cooked in. Skim any foam off the surface; you want to make sure you have a good bit of water in the pot, about 3/4 full. If water has boiled off, then just add more. Bring to a boil and add 1 can of Cream of Chicken, 2tbs butter, 3 boullion cubes, 1 tsp of garlic salt. Stir well
Over medium high heat, begin adding dumplings. Tear them into quarter size pieces and drop into the boiling water.
Hint: The less you stir the better they are, so after you add all of them, reduce the heat to medium setting, stirring only occasionally. Add chicken back into pot, tearing into small pieces. Cook until the dumplings are soft; this usually takes 30 to 45 minutes. I promise these are the best dumplings you will ever eat!. Enjoy!

I have use this myself and a side of corn bread (Jiffy)
1 (30 oz.) can chili beans
1 (15 oz.) can tomato sauce
1 onion, chopped
1 lb. ground beef
1 tsp. - 1 tbsp. chili powder
1 tsp. cumin
Salt to taste
1 tsp. garlic powder (optional)
Brown onion and beef in a skillet. Transfer to crockpot, and add remaining ingredients. Cook on low for 3-4 hours, stirring occasionally. (May be made on the stove. Just simmer covered for 1 hour.) Serves 4-6.

I get a ton of recipes from allrecipes.com You can even put in what ingredients you have on hand and it will find you recipes. Inthe colder season my family likes chicken and dumpling or pot pie. Try some soups you can cook in the slow cooker or chili.

im making caseral tonight
1 pound hamburger
1 family size can mushroom soup
1 can green beans
1 can corn
1 can peas
1 package of american individual sliced cheese
tater tots
brown hamburger drain the oil....throw in a bowl along with mushroom soup peas corn and green beans stir evenly....then put in a cake pan....layer the top with the cheese slices and put tater tots on top....cook at 375 for about a half hour to 45 minutes once the tater tots are golden brown its done...
its AWSOME lol
