You can cook anything in an electric skillet that you can cook in a frying pan or in a sauce pan. I like an electric skillet because you can fry hamburgers or steak or any other meat that is going to sort of splash out spatters of grease and it doesn't land on the rest of the burners on the stove -- just on the kitchen counter which is very easy to then clean up. Also, for reheating foods, such as stew, if you turn the skillet on low to medium low, things heat up great and things don't stick to the bottom of the pan. They are great for spaghetti sauce -- simmer it and those ugly orange splatters aren't all over your stove and burners, but on the counter top, easily cleaned up. I am a grandmother and started using an electric skillet many, many years ago when I got sick of making hamburgers and having to clean the whole stove top. I am probably on my 5th one or so -- they tend to last for about 3 or 4 years, then the burner will not work or the finish is so worn off that I just buy a new one. Also, when you buy one, it will come with a small recipe book. And, if you google "electric skillet meals" you'll get a ton of results. I could go on and on about how great they are -- cooking bacon or sausage, the mess is just so much easier to clean up. Fried chicken is great. Eggs are easy. As I said, I could go on and on, so I'll just shut up for now!

Get a cheap cut of beef or pork. Take two cans of Cream of mushroom soup and place into a bowl and mix with equal parts milk. Poor half that mixture into the skillet and then place your meat into the skillet. Poor the remaining soup mixture over the top. Put the lid onto the skillet and cook on a low temp 200-250 for three hours or until the meat is thoroughly cooked. The slower the cooking process, the more tender the meat.
It is YUMMY!

You can cook just about anything you want with those tools. Stir fry in the skillet. or a roast with veggies. Anything you can cook on a stove you can cook in an electric skillet. Just watch to make sure it doesn't overcook or stick. You can bake in the toaster oven and there is a multitude of foods pre-packaged for the microwave.

You can cook anything you like that you may have cooked on an electric burner in a frying pan. Quick and easy...Brown some hamburger, drain the fat and pour in some cream of chicken (or mushroom) soup and milk stir well and let simmer for awhile. Season with salt and pepper and just a little garlic salt if you have it. If you have a rice cooker, make some rice or nuke some potatoes to pour meat and soup mixture over.
Get some frozen veggies and just before meal is done, nuke them with some butter and salt for about ten minutes. Simple and tasty!

Make a stir fry with chicken marinated in soy sauce and water, and some frozen chinese veggies. Throw in some broken up ramen noodles and a cup of water for the last few minutes of simmering.
Or, chicken strips, onions, and green peppers sauteed with a packet of taco mix...serve on tortillas for fajitas.
Or sautee beef cubes in broth or red wine, add fresh sliced mushrooms and thicken the broth for beef tips over rice or noodles.
Go to Campbell's website--they have lots of one-skillet meals, easily made in an electric skillet instead of a stovetop.

you can boil water and cook noodles, you can buy those meals in a box, you can make spagetti by cooking the meet in the skillet first, while you boil the water in the nuker and cook the noodles. After you cook the meet drain the drippings off, and put in a can of spagetti sauce and warm. Drain noodles, there you go.
There's a ton of things you can do with these things-
fried rice:
cook rice in nuker (water and rice, it has directions on the bag for nuker cooking)
Place bacon in skillet- cook, drain when done, add rice, frozen peas, and basically whatever else you have in your fridge. Make sure you don't burn it, but warm, and fry up in some left over grease from the bacon. it's tasty. I'm sure you've got tons of other answers but here's some.

This Site Might Help You.
RE:
What can I cook in my electric skillet?
I'd like to cook something nice for dinner, but I only have an electric skillet, a microwave, and a toaster oven.
What I can cook in my electric skillet that's easy, and tasty? If it's especially tasty, I might forgo the "easy" requirement to make it.
Thanks!
