Yes - we LOVE this dish!

1 lb Keilbasa Sausage, cooked & chopped into bite size pieces
32 ounces Sauerkraut, rinsed & drained
16 ounce tub of sour cream
1 1/2 cups Swiss Cheese, shredded & divided
5 servings mashed potatoes

Combine sausage, sauerkraut, sour cream and 1 cup Swiss cheese. Place into 2 quart casserole. Combine the mashed potatoes and rest of Swiss cheese and spread over the kraut combination. Bake at 350 for 30-40 minutes until heated through.

A traditional Polish recipe called "Bigos" (bee-gos) is simple enough and more than delicious!

Need:
1 med Onion
Cabbage (medium head - chopped into slivers)
Sauerkraut (32oz bag - rinse lightly--you want it to still be sour just not overly so)
meat (whatever you got leftover: sausage, bacon, chicken, kielbasa, beef, pork - or a combination of some or all)
dried wild mushrooms (Rehydrated- should be softened before added)(optional)
approx 1/3 small can tomato paste
oil
salt
pepper
sweet or hot paprika (you choose)
bay leaves*

As this recipe is EXTREMELY forgiving, you can 'wing' the ingredient amounts but basically:

Sautee the chopped onion in oil till translucent.
Add the chopped cabbage and cook down for another 15 min. Add alittle more oil or water if it gets too dry.
Add the sauerkraut and cook for another 15 min.
Cut up into bite-sized pieces the cooked leftover meat and add to the cabbage that is cooking.
Add mushrooms (optional).
Add to taste: salt, pepper, sweet or hot paprika, and 2-3 bay leaves.
Mix in the tomato paste til the color is a tasty warm brown/orange.
Cook for another hour or so covered on low heat. Add water or some more oil if it's too dry. It should be the 'wetness' of coleslaw.

Then you can be done and serve or cool and put in fridge to reheat for another day. The flavors really develop best when you reheat this dish and then serve.

For the beginner cook: *bay leaves flavor the dish. You do not want to crush these and try to eat them or anything. You can attempt to extract them before serving or they get taken out by whoever gets them in their portion.

INGREDIENTS
2 cups uncooked elbow macaroni
1 pound bulk pork sausage
1 (16 ounce) can tomatoes with liquid, cut up
1 cup sauerkraut
1 teaspoon sugar
4 tablespoons shredded Cheddar cheese




DIRECTIONS
Cook macaroni according to package directions. Meanwhile, brown sausage in a skillet,; drain, reserving 1 tablespoon drippings. Add tomatoes and sauerkraut to pork and cook for 2 minutes. Drain macaroni; stir into skillet along with cheese. Spoon into a greased 8-in. square baking dish. Bake, uncovered, at 350 degrees F for 20 minutes.

We use keilbasa, but you could use any sausage. Cut up the sausage in slices or chunks, then cook in a large saucepan until cooked (if precooked, then just brown it). Add a bag of frozen bell peppers, or bell peppers & onions. Warm for a few minutes, then add a can of sliced potatoes, and a can (or half bag) of sauerkraut. So easy & quick. I like to serve this with buttered bread. Hope you like it.

I like sausage and sauerkraut together as one dish....

I empty the saurekraut in a sauce pan and then I slice up smoked kilbasa sausage and then cook it together on med heat....the kraut juice and the juice from the sausage mix together and it just sooo good!

I have also used those lil smokies instead of slicing up the sausage which has the same effect...

Layer sausage (or some other types of pork) with sauerkraut, sliced potatoes, and onions in a slow cooker. Season with caraway seed, brown sugar, and some of your favorite seasonings. I like garlic pepper salt.

Cook on low for about 8 hours.

the sausage and sauerkraut by its self is really really yummy.. just brown the sausage in a pan and then put it with the sauerkraut with it and heat it up..
