Best Banana Bread:
1¼ hours 8 min prep
10 servings 1 loaf
1/2 cup butter
1 cup sugar
2 eggs, beaten
4 bananas, finely crushed
1 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon vanilla
Cream together butter and sugar.
Add eggs and crushed bananas.
Combine well.
Sift together flour, soda and salt. Add to creamed mixture. Add vanilla.
Pour into greased and floured loaf pan.
Bake at 350 degrees for 60 minutes.
Keeps well, refrigerated.

Banana Nut Bread
3 ripe bananas, mashed
2 eggs, well beaten
2 cups all-purpose flour
3/4 cup granulated sugar
1 teaspoon salt
1 teaspoon baking soda
1/2 cup chopped nuts
In a large mixing bowl, mix together the mashed bananas and beaten eggs. Sift together the flour, sugar, salt, and soda and stir into banana mixture until well blended. Stir in nuts.
Pour banana nut bread batter into a 9x5-inch loaf pan and bake at 350° for 55 to 60 minutes, until a wooden pick inserted in center comes out clean.

here is my recipe for banana nut bread....I have fixed banana nut bread a couple times for my husband....
1 3/4 c. all purpose flour
1 1/4 t. baking powder
3/4 t. salt
1/2 t. baking soda
2/3 c. sugar
1/3 c. shortening
2 eggs
2 T. milk
1 c. mashed ripe bananas (2 0r 3)
1/4 c. chopped pecans or walnuts
Preheat oven 350 degrees. Lightly grease 8 x 4 x 2 loaf pan. In mixing bowl, stir together flour, baking powder, soda, and salt. Set aside. In another mixing bowl, cram sugar and shortening with electric mixer until light, scraping sides of bowl often. Add eggs to sugar mixture one at a time and then the milk beating until smooth and fluffy. Add flour mixture and mashed bananas alternating to cream mixture, beating until smooth. Gently fold in chopped nuts. Pour batter into the loaf pan. Bake for an hour to an hour and 5 min or until toothpick inserted near center comes out clean. Cool in pan 10 min. Remove and cool thoroughly on wire rack.

Banana Nut Bread Recipe

2 cups unbleached all-purpose flour
1/2 cup chopped walnuts (optional)
Instructions:
Pre-heat oven to 325 degrees F
Cream shortening and sugar in a mixing bowl
Add eggs, then add mashed bananas and then the buttermilk
Add soda and flour and blend well
Stir in walnuts
Pour into a greased loaf pan
Bake slowly for one hour or until toothpick inserted comes out clean
Let stand 15 minutes before
removing bread from pan
Slice and ENJOY your banana nut bread!

1 tsp. salt
3 bananas
2 cup flour
1 tsp. baking powder
½ tsp. baking soda
Walnuts or chocolate chips (optional)
Cream shortening and sugar. Add eggs. Mash bananas thoroughly and add to mixture. Sift flour, baking soda, baking powder and salt together and add to other ingredients. Place in greased and floured loaf pan and bake 350˚ for 50 minutes.

After you are done with your banana bread, freeze your future excess fruit. Bananas, if intended to be cooked in recipes or used in smoothies, can be frozen. The peels will turn black, but the fruit will be okay when you next peel it and mash it for banana bread, puddings, cakes, muffins, or even smoothies. A frozen banana is very easy to peel. I seem to make a habit of throwing out dark soft bananas, and to prevent waste, I got in the habit of putting them in my freezer. I take one out, cut off a piece, peel off the black skin, and into my smoothie maker it goes. It's both flavorful and adds to the frozen texture.

KF is right. I came in to a lot of bananas some time ago so I froze them. Now I am using them in baking. Very handy to have on hand.

get a box of bannana bread mix and add 2 of your bananas.it is incredible and a good shortcut.mix sugar and roasted walnuts on top before you bake
