This is a WONDERFUL recipe that everyone loves. My family asks for it at every function.
CARROT CAKE
2 cups plain flour
2 cups sugar
2 teaspoons baking powder
2 teaspoons soda
1 teaspoon cinnamon
1 teaspoon salt
4 eggs
1 1/2 cups Wesson oil
3 cups grated carrots
1/2 cup chopped pecans
1/2 cup chopped English walnuts
3 - (8 ounce) packages cream cheese
1 stick butter (not margarine)
1 - (2 pound) bag of powder sugar
Preheat oven to 300 degrees. Mix flour, sugar, baking powder, soda, salt, cinnamon. Beat eggs and add oil. Combine dry ingredients with egg mixture. Add carrots and nuts and pour into 4 greased/floured cake pans (8 or 9 inch) and bake for 45 minutes at 300 degrees. Cream together cream cheese and butter. Add sugar and beat well. ( I always let my cake cool for a very long time, sometimes overnight) When cake is cool, frost between layers.

Fluff - Recipe
1 container Sour Cream (2 cups)
1 pkg Jello Powder (any flavor)
Stir these two together
Add 1 large can (drained) crushed pineapple
1 container Cool Whip
Mix it all together refrigerate at least an hour, can be made the day before.
Better than ice cream - but doesn't melt - keeps for a few days in the fridge
You can make a red one and a green one (cherry and lime Jello)
Other favorites are Orange - garnish with mandarin slices
Use Berry Blue - nice baby blue color

I made these awesome "Black Forest Cupcakes" YUM!
1 pkg. (2-layer size) chocolate cake mix
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1 egg
2 Tbsp. sugar
1 can (20 oz.) cherry pie filling, divided
1-1/2 cups thawed COOL WHIP Whipped Topping
PREHEAT oven to 350°F. Prepare cake batter as directed on package; set aside. Mix cream cheese, egg and sugar until well blended.
REMOVE 3/4 cup of the pie filling for garnish; set aside. Spoon 2 Tbsp. of the cake batter into each of 24 paper-lined medium muffin cups. Top each with 1 Tbsp. each of the cream cheese mixture and remaining pie filling. Cover evenly with remaining cake batter.
BAKE 20 to 25 min. or until toothpick inserted in centers comes out clean. Cool 5 min.; remove from pans to wire racks. Cool completely. Top cupcakes with whipped topping and remaining pie filling just before serving.
Make sure you buy extra cream cheese and cherry filling. There was NOT enough when I first made the recipe to fill everything. I was disappointed, but made a better batch next time.

Christmas Trifle
Pound cake or angel food cake, cut into chunks
Vanilla pudding
Frozen or fresh strawberries, thawed with juice
(if using fresh, sugar them and stir to create some juice)
Cool whip
Sliced almonds, If desired.
In a large glass bowl, layer the cake, strawberries and pudding. Continue layering until you nearly reach the top of the bowl. For the last layer, put cool whip on top and sprinkle with almonds, if desired.
I like this because you can use as much of any ingredient as you wish and it looks very pretty in a glass bowl!

A beautiful fruit pizza. Spread a cookie sheet (Preferably round, or a round pizza stone) with a layer of thinly sliced sugar cookie dough circles, to form a complete circle (and the round slices of sugar cookie dough will make an attractive scalloped edge. Bake according to package directions until light golden brown. To this cooled "pizza base" add a "base sauce" mixture of cream cheese, powdered sugar, and lemon juice or an extract to taste. Arrange cut fruit attractively over all. Glaze with either more lemon juice, or even heated and diluted apricot jam, to seal. There are many different combos to choose from, including holiday themed red and green fruits, but a fruit pizza -- an easy tart actually -- is quite attractive, easy to slice and serve.

Pavlova is a sort of national dish in Australia. A dessert (invented in NZ, ) The main ingredients are sugar and egg white. A pavlova has crisp meringue outside and soft marshmallow inside, and has approximately the dimensions of a deep dessert cake. You can decorate "pav" with any fruit kiwi fruit, strawberries, blackberries, blueberries, oranges, etc. Also grated chocolate. This dessert is served for functions where there are a lot of people and you can triple the recipe. Also decorate just before serving.
classic pavlova
Ingredients (serves 6)
1 tablespoon cornflour
6 eggwhites
1 teaspoon cream of tartar
1 1/3 cups caster sugar
1 teaspoon vanilla extract
1 teaspoon white vinegar
200ml pure cream
250g frozen raspberries, slightly mashed
Method
Preheat oven to 200°C. Draw a 24cm (diameter) circle on a sheet of baking paper. Place, pencil-side down, on a baking tray. Dust lightly with 1 teaspoon cornflour.
Using an electric mixer, beat eggwhites and cream of tartar in a large bowl until soft peaks form. Add sugar, 1 tablespoon at a time, beating constantly until thick and glossy. Add remaining 3 teaspoons cornflour with the last tablespoon of sugar. Fold through vanilla and vinegar.
Spoon meringue onto baking paper. Shape into a circle, using the pencil mark as a guide, with a slightly higher edge and a low centre. Reduce oven to 100°C. Bake for 1 1/4 to 1 1/2 hours or until dry and crisp. Turn off oven and open oven door. Cool completely in oven (pavlova may sink during cooling).
Slide pavlova onto a serving plate. Spread with cream and top with raspberries. Serve.

Pavlova base
4 large egg whites
Pinch salt
1 tsp vanilla essence
220g (1 cup) caster sugar
Topping
400mls thick cream
750g (3 punnets) strawberries, hulled
4 passionfruit
Icing sugar, to serve
Method
To make the pavlova base, preheat oven to 120°C. Use a 20cm round cake pan as a guide to trace a circle onto a piece of non-stick baking paper. Place paper, penciled-side down, on a baking tray
Whisk the egg whites and the salt in a large mixing bowl with electric beaters until soft peaks form. Add the vanilla and then gradually add the caster sugar, a spoonful at a time, whisking well after each addition until the sugar dissolves, Whisk the mixture until thick and glossy Spread the meringue mixture over the prepared baking paper using the marked circle as a guide for the base. Reduce oven temperature to 100°C and cook for 1 1/2hours. Turn off the oven and allow the base to cool in the oven.
For Kerri-Anne's topping, "Spread cream over the pavlova base. Place whole strawberries around the edge of the base to form a border. Slice the remaining strawberries and arrange over the cream. Cut the passionfruit in half and scoop out the pulp over the strawberries. Serve sprinkled with icing sugar."
