It depends on what type of salami... pork, beef, etc. It can really be made out of any animal, but the most common is beef or pork. And... as they say... "Parts is parts"! All sorts of unused parts of the animal end up in the salami. But it's good anyway!

its basically a cured sausage from either chopped beef, pork, goat, etc which is then fermented and dried and might include fat, wine, salt , various herbs and spices .......it tastes REAL good on pizza

All the leftover bits. Look for kosher when buying hot dogs and lunch meats - they don't use the disturbing parts.
