Beans and rice and corn
1 can black beans (or any kind of canned beans), drained and rinsed
1 can corn
1 cup minute rice.
1/4 cup water
Pour drained black beans into pot. Add 1 full can of corn including the corn water in to a pot. Bring to a boil. Stir in the minute rice and remove from heat. Let the rice absorb the water (Minute Rice or quick-cook rice takes about 5 minutes)
You can add salt and pepper if you like.
I like to dress mine up with olives and either ranch or Italian-style dressing. You can also dress it up with a good salsa or a few jalapenos and sour cream on top.

I think I have given this recipes before but here goes. This is a recipe that is suitable for a buffet or potluck. You may want to cut it down a bit for only one or two people:
Black Bean Salad
3 can black beans, drained and rinsed
1 red bell pepper, diced
1 green bell pepper, diced
1 bunch green onions diced
1 bunch cilantro chopped
1 tomato diced
1 jar salsa - whatever heat you like
Juice of three limes
Salt and pepper to tast
1/2 cup crumbled cotija cheese
Combine the first 9 ingredients, cover and chill
Garnish with the cheese and serve

Make a cold salad with it.
Drain beans, rinse if you like, add a can of drained corn, chopped red and green bell peppers, chopped cucumbers and a little cilantro. Sprinkle a little salt and pepper and your good to go.

Somtimes when I want something healthy but fast. I make a black bean/ rice/chopped chives/ salsa/ avocado combo and wrap it in a warm tortilla. Fast.. easy.. full of fiber and protein.

-one can of pineapple tidbits (or crushed)
-1 - 2 tbsps. of orange marmalade
-splash of rice wine vinegar
-chopped green chiles (or any hot pepper of your choice)
-grated or minced ginger (optional)
Simmer all ingredients in a pot. Serve over rice, fish, or anything.
Very versatile and very easy to make.

Rice, and red pepper flakes, salt, cumin, oregano, splash of white vinegar and pepper. You can serve it with chicken, steaks, kielbasa or anything really.
