These look delicious.
I made cream cheese wrap cookies one year. My husband loved them. They were very easy to make. The filling is key.
It's cream cheese and flour. You mix them together and roll them flat, cut into a rectangular shape, put in jelly or jam (whichever is more flavorful), and fold, bake in the oven. I'm not sure on the temperature or the time. I found the recipe in a Better Home & Gardens cookie recipe booklet (christmas).

I don't know the exact link, but Andes Mints has a recipe for a great cheesecake. I made it last year for Christmas.

I made this dessert last year and eveyone loved it. And I bought everything!
Cut up 2 premade poundcakes into bite sized cubes. Then mix together 1 container of Kozy Shack vanilla pudding (I expect 2 instant should give you the same amount), 1/2 container of softened cream cheese and 1 container of Cool Whip. Layer this in a pan or trifle dish if you have one.
Cake, cream mixture, chocolate syrup and candy canes you have banged in a plastic bag until they are small pieces. End with the candy canes. Pop in the fridge for a few hours.

Plum pudding. What else would you eat on Christmas day? If it's good enough for the Cratchits, it's good enough for anyone. My family has a very old recipe, which I posted on recipezaar as "Pirate's Plum Pudding."

Something pretty quick and a Christmas staple for my family is trifle... and you can make it fairly festive coloured! Simply layer alternatively in a deep serving bowl:
white sponge cake, red or green jello, peahces/raspberries, and custard.
Then spread whipped cream over the top and sprinkle with chocolate or for a Christmasy feel, silver edible candy balls (for cake decorating).
Last christmas I made chocolate brownies and piped Chrismast designs on each slice, like a Christmas tree, holly, and a star.
As a last minute cook myself, I hope it all goes well, you get some good answers and your not up till dawn making cake!!! Good luck :)

Here's a really easy, but delightful one!
Jenny's Christmas Pie
1 can sweetened condensed milk
1/3 cup fresh lemon juice
1/2 pint heavy whipping cream
1 tsp vanilla
1 tsp almond extract
1 can cherry or raspberry pie filling
1 homemade graham cracker crust
Mix lemon juice with condensed milk and stir until thickened. Whip cream with extracts until stiff peaks form. Fold into milk mixture and spoon into crust. Top with pie filling and chill for several hours before serving.
