I make a tapenade that chef Alice Waters once made on TV with Julia Child.

I don't remember the actual amounts...I eyeball everything, but the following are my best guesses as to what the actual recipe is:

1 cup Low Salt Green or Black Olives, flesh cut from the pits - I use Cerignola olives...they're large, meaty and it's easy to cut the meat off quickly. You can't use jarred pitted olives because the salt content is too high.

2-4 Anchovies finely chopped

1/4 cup salt packed capers, rinsed

1 tablespoon lemon juice

1 tablespoon cognac

4 tablespoons extra virgin olive oil

1/8 teaspoon medium ground black pepper

Chop all solid ingredients (I do this by hand because I like a coarser tapenade, but you can do it in a food processor. Just watch your liquids if you do. The tapenade may be runny if you make it too smooth.) Pour off any excess liquid that may come our of the chopped mixture.

Stir in the cognac, olive oil, lemon juice and black pepper.

It's best if it can sit out at room temperature for half an hour to two hours so the flavours can meld. Serve on grilled or toasted rustic bread, drizzled with a bit of olive oil.

The recipe can be altered any way you like...if you like more anchovies, add more. If you don't like capers, leave them out, etc.

Ingredients:
1 cup sour cream
1/2 cup finely chopped stuffed green olives
1 1/2 tablespoon anchovy paste
1/2 teaspoon grated onion


Combine all ingredients; mix well.

Cover and chill at least 2 hours before serving

It's tappenade. I make this all the time. So my recipe is off the cuff.

I get 1 on the medium sized container of a mixture of pitted olives (make sure one is cured with garlic so you don't have to add more - if you don't then you have to add a clove of garlic). Dump this in a food processor with 2 anchovies packed in oil, a sqeeze of fresh lemon juice and pour in some olive oil until you get a nice consistency.
