Making dinner for family, and some of them cannot have potatoes, peppers or tomatoes...............what are some good side dishes I can make that'd go with a roast..........a starch and a veggie, preferably.............or name some good side dishes to go with grilled chicken that dont contain any of the above mentioned items.

Roast Parsnips with Brussel sprouts and baby carrots and when cooked through drizzle honey over them ...... sprinkle with sea salt and hey presto yummyness on a plate x

While you are cooking the chicken in the oven. Wash all the ingredients you have ( potatoes, Green and red peppers) cut the potatoes about 11/2 in x 1 1/2 in cubes, place in a baking tray, finely chop some garlic sprinkle them on top of the potatoes, sprinkle oil on top ( whatever you have canola or olive oil). Sprinkle some salt qnd pepper. Put in the same oven as the chicken. When it is about half way done add the pepper tha has been oiled and salted. To the potato tray, back in the oven. Oil helps the salt to adhere to the food. This is all of matter of timing if you got it right the chicken will be done the same time as your side dish. You can save on gas at the same time.

Haricot Vert Almondine

Sautee up 1 finely sliced shallot in a about 2 tbsp. of olive oil. Then add 1 bunch of fresh French green beans (if you can't find them long green beans will work fine). Cook them until they are bring green adding a little salt and pepper. They take maybe 5 minutes, the top with sliced almonds you have toasted in the oven. It's great, and light.

I don't have a name for this, but it's something that I make often. Get par boiled rice and make according to the package directions for your amound but use chicken stock instead of water and double the amount of salt. As soon as it's finished add some butter, it's hard to say how much because I don't know how many serving you will be making, but 1 tbsp. per 4 servings sounds about right, you don't want it greasy, just a little richer. Then add in a few chopped scallions and serve with parm cheese. It's really good.

Baked Mushroom Rice serves 6

INGREDIENTS
2 cups uncooked white rice
1 (10.75 ounce) can condensed cream of mushroom soup
1 cup vegetable broth
1/2 cup chopped onion
1/4 cup fresh chopped mushrooms
1 teaspoon dried parsley
1 teaspoon dried oregano
1/4 cup butter, melted
salt and pepper to taste

DIRECTIONS
Preheat oven to 400 degrees F (200 degrees C).
In a large bowl, stir together the white rice, cream of mushroom soup, and vegetable broth. Blend in the onion, mushrooms, parsley, oregano, melted butter, salt, and pepper. Transfer to a 2 quart baking dish, and cover with a lid or aluminum foil.
Bake for 35 to 40 minutes in the preheated oven. If the rice is looking dry before it is tender, then pour in a little water and continue cooking until rice is tender.

Green beans or broccoli (plain, steamed or with bacon and sauteed onions)

Starches:
Macaroni and cheese (homemade of course)
Rice with gravy from the roast
Buttered egg noodles with fresh parsley

I have started having grilled field mushrooms, corn on the cob and aspargus with mine, also carrot mash or carrot and swede mash, it makes such a change to have these veggies with a roast instead of the normal cabbage, carrots, peas etc

how about a broccoli and cheese casserole? steamed veggies go well with grilled chicken.....

I grilled some chicken the other night and opened a bag of frozen broccoli and cauliflower mix and steamed them and added some velvetta cheese and milk to make a cheese sauce and they were really good...

you can find those packets of different flavors of rice......rice pilaf would go well with grilled chicken......the cheesy broccoli rice is my favorite though....

how about creamed corn or corn on the cob? I think you can find those cobbettes in the frozen food section.....or just open a can of corn? For creamed corn...cook your corn until heated thoroughly and then add a bit of milk....in a small container with a lid, pour about 1/4 cup of milk and add about a couple teaspoons of flour and shake it up really well and pour it into the corn and milk....salt and pepper....as it cooks the sauce should thicken..

open a can of peas or cook frozen peas and spice to your liking?

how about cooked carrots?

green beans makes a nice side dish....

macaroni and cheese goes good with just about anything :)

Carrots baked in with the roast are very good. I've seen brussel sprouts baked in the oven as well (not with a roast, just on a pan by themselves) and have been anxious to try them.
